I just made this for a friend’s birthday, who loves strawberries. It is a lot of steps, but it is seriously one of the best things I’ve ever made. Definitely going to use this recipe again. The taste was so delightfully strawberry-y and creamy. It does come out moist and dense, so if you don’t care for that, I think some people have tried whipping the egg whites separately and then incorporating them, to make things fluffier. Also I would make the purée the day before, because it takes a very long time to cool.
