Brie, prosciutto and roasted pineapple get tucked into flaky puff pastry for a ~twist~ on pigs in a blanket!

Ingredients

10 strips fresh ripe pineapple, each about 3-by-1/2-by-1/2 inches (from about 1/4 ripe pineapple)
1 sheet frozen puff pastry (from a 17.3-ounce package), thawed
5 thin slices prosciutto, halved crosswise
5 mini Brie bites, chilled, halved into semi-circles
1 beaten egg, for brushing
1 tablespoon pineapple preserves, chilled
Everything bagel seasoning, for sprinkling

Directions

Special equipment: a 6-quart air fryer

Set a 6-quart air fryer to 375 degrees F. Place the pineapple in the basket and cook until darkened at the edges, 8 to 10 minutes. Let cool completely.

Meanwhile, roll out the puff pastry to a 12-inch square about 1/16-inch thick. Cut the puff pastry into four 2-inch-wide strips. Then cut each strip into 4-inch-long rectangles to yield ten 2-by-4-inch rectangles (you will have some leftover pastry; reserve for another use).

For each bite, place a 1/4 teaspoon of pineapple preserves in the middle of a halved prosciutto slice. Top with a brie half and a piece of roasted pineapple and roll the prosciutto around everything into a tube. Brush a puff pastry rectangle with the beaten egg. Place the filled prosciutto in the middle of the rectangle and roll it up, making sure the short ends overlap. Seal and arrange seam-side down on a plate. Repeat to make 10 filled bites.

Brush the tops and sides of the pastry with the beaten egg and sprinkle each with a pinch of bagel seasoning. Refrigerate the bites for 15 minutes to chill the puff pastry.
Set the air fryer to 350 degrees F. Arrange the puff pastry bites in the basket and bake until golden brown and fully crisp, 12 to 14 minutes. Let cool 5 minutes before serving.
