Ingredients
For the Chicken Parmesan:
2 large chicken breasts, pounded to ½-inch thickness
½ cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
½ cup grated Parmesan cheese
1 cup mozzarella cheese, shredded
ÂĽ cup olive oil
Salt and pepper to taste
For the Marinara Sauce:
2 tbsp olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
28 oz San Marzano crushed tomatoes
1 tsp dried oregano (or 1 tbsp fresh)
1 tsp salt
½ tsp black pepper
5 fresh basil leaves, chopped
For Serving:
Cooked spaghetti (optional)
Extra basil for garnish
Steps:
Prepare Chicken: Pound chicken breasts to ½-inch thickness. Season with salt and pepper.
Set Up Breading Station: Place flour, beaten eggs, and panko mixed with Parmesan in three separate shallow dishes.
Coat Chicken: Dredge each chicken breast in flour, dip in egg, then coat with panko-Parmesan mixture, pressing to adhere.
Make Marinara Sauce: Heat 2 tbsp olive oil in a saucepan over medium heat. Sauté onion until soft (5 minutes), add garlic, and cook 1 minute. Stir in crushed tomatoes, oregano, salt, and pepper. Simmer 10 minutes, then add basil.
Fry Chicken: Heat ¼ cup olive oil in a large skillet over medium heat. Fry chicken cutlets 3–4 minutes per side until golden and cooked through (internal temp 165°F).
Assemble: Place fried chicken on a baking sheet. Spoon marinara sauce over each cutlet and sprinkle with mozzarella.
Bake: Bake at 400°F for 8–10 minutes until cheese is melted and bubbly.
