Chile Con Queso

Ingredients

One 1-pound package refrigerated hot breakfast sausage
1 onion, diced
One 2-pound block processed cheese, such as Velveeta
One 10-ounce can diced tomatoes and green chiles
2 cans chopped green chiles
1 jalapeno, diced
Chips, for serving

Directions

Brown the sausage and onion in a large nonstick skillet, breaking the sausage up as you go. Once browned, drain off some of the fat.

Chop the cheese block into cubes and add along with the diced tomatoes and green chiles and chopped green chiles, juice and all.

Cook over a low heat until it all starts coming together. Then stir in the diced jalapeno. Serve with chips.

    You can also use a can of Campbell soup cheddar cheese with shredded jack cheese instead of velveeta. I like to add black beans and corn sometimes with or without meat. So many different versions for this dish.

    1 package Jimmy Dean Mild Sausage

    1 box Velveeta Cheese cut into 1-inch cubes

    2 cloves garlic chopped fine

    8-fennel seeds ground

    Sprinkle dried parsley

    Sprinkle cilantro

    6 oz extra hot rot tel

    6 oz diced tomatoes

    1 small onion finely diced

    Olive oil

    Start with a couple of turns of olive oil in a 10-inch skillet on med high

    heat. Add garlic then

    sausage. Brown sausage then chop in food processor till fine and return

    to pan. Add onions

    and cook till translucent. Add tomatoes, parsley and cilantro. Add

    mixture to crock pot with

    Velveeta and heat till well meted stirring often.

    You could use a can of Rotel, as well. Rotel comes in different levels of heat…regular to extra hot.

    Velveeta now has a white cheddar queso in the same size block in a box, any recipe , mexican , queso , etc… is better with that cheese
