Fettuccine Alfredo

Yield: 6 to 8 servings

Ingredients

18 ounces fresh fettuccine
2 1/2 cups heavy cream
1/2 cup fresh lemon juice
12 tablespoons unsalted butter
2 cups grated Parmesan
2 teaspoons grated lemon zest
Pinch freshly grated nutmeg
Salt and freshly ground white pepper

Directions

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

    Not an authentic recipe I'm afraid. There are only 5 ingredients in the original Alfredo – fettuccine, butter, parmesan, pepper and water from the cooked pasta. No cream, no lemons

    Has to be the very best quality Parmegano-Reggiano cheese you can find…makes all the difference…..

    I have had the pleasure of eating at Il Vero Scrofa and they laugh at these type of recipes. Their recipe calls for good butter and Parmigiano reggiano, that’s it no cream, no chicken, shrimp or such

    I suppose nowadays, you can get good quality Parmigiano Reggiano even in America, so you won't need the heavy cream. Just use a bit more butter. I'm not impressed by her cooking.

    It would be better if the title of the video was "lemon fettuccine alfredo". Btw, I once made Alfredo pasta and added lemon zest and juice to try something different, and I really loved it, it tastes so fresh and delicious.

    People have said she always has a spit bucket out of camera view and never actually swallows and that's how she puts lots in her mouth each show but never gains weight. I'm a guy that well just sounds wrong.
