German Potato Salad
RECIPE COURTESY OF BOBBY FLAY
Level: Easy
Total: 35 min
Prep: 15 min
Cook: 20 min
Yield: 8 servings
Ingredients
3 pounds new potatoes
1 yellow onion, quartered
1/2 pound bacon, diced
1 large red onion, diced
3/4 cup cider vinegar
1 tablespoon Dijon mustard
1/4 cup canola oil or olive oil
Salt and freshly ground pepper
8 green onions, thinly sliced
1/4 cup chopped fresh parsley leaves
Directions
Preheat the grill to high. Place potatoes in a large pot with the yellow onion and cover with cold water. Cook, on the grates of the grill, or on a burner, until tender. Drain, discard the onion, and cut the potatoes into cubes when cool enough to handle. Place the potatoes in a large bowl and cover to keep warm.
Place a large saute pan on the grates of the grill. Add the bacon and cook until crisp. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Add the red onion to the rendered bacon fat and cook until soft, about 3 to 4 minutes. Carefully add the vinegar and mustard and cook for 2 more minutes. Whisk in the oil and season, to taste, with salt and pepper. Add the hot dressing to the potatoes and toss gently to coat. Fold in the green onions and parsley. Season again with salt and pepper, to taste.

That’s not German potato salad recipe. He doesn’t know what he’s talking about plus why so much oil. The ingredients float in olive oil. Beside that, No one (absolutely no one) in Europe eats the potatoes with the skin on because it’s disgusting 🤮

I'm really sick of this style of aggressive cooking program. Dude, just chill out. You're not on the line and you don't know more about cooking than everyone else. Just show us the recipe and stop the nonsense.

I do not burn my bacon. Your heat is turned up too high. I always get my potatoes room temperature before dressing them. I find that tasting a little potato under the dressing is a good thing.

I've learned this…don't boil the potatoes. Grill or bake them. Unlock those sugars!

While I'm sure that it tastes great. This is definitely not "the typical" German potato salad.

This is not the German potato salad that my great great grandfather passed down to the family! The olive oil and vinegar and the onion and greens are the only original items! I'm a born and raised Louisiana man who has a German last name but I'm mostly Cajun and Indian! We keep our recipes in family and my potato salad is from before the 1800s! Your recipe looks good but I think mine is better and original! Peace out have a nice day!

the man! i looked at other recipes- i'm going with Bobby's. Music doesn't really enhance the visual though. We need Oscar Peterson's piano, or maybe a Weather Report CD ('Heavy Weather' would be appropriate) electric guitar with distortion is cheezy against Bobby's classy demonstration.

I think the olive oil is a tad overkill, considering you already have all that bacon grease in there.

I am type 2 diabetic, I have to eat low carb. But I love German food! Do you think I could make this with radishes in place of the potatoes? I make a faux Northern German potato salad that we enjoy. The mouth feel is close enough that it satisfies the brain and tastebuds .

Hey Bobby you forgot the pickle juice, pickles, beef/Chicken broth. and some thinly sliced radishes, southern German no Mayo! And it needs to rest for about 3 hrs, or over night! Yours looks to mushy

I like how terrible the camera work is and how he accidentally over cooked his potatoes so they fell apart. The thumb nail is why I clicked and it isn't even the dish he made.

I've made this or a version of this probably 10 times since I saw the original video all those years ago. It often overshadows any grilled meats it's accompanying. The one with the best reviews pretty much follows this, but I add honey to the mustard.

Germans don’t use olive oil for their potato salads. They use sunflower 🌻 oil. Still good recipe 👍

Well, it's not a German potato salad, but I'm quite sure it's delicious, I will give this one a try.
Btw, the first clue is, we don't leave the potato skin on, we peel them off.
