After you remove the bird from the brine, do you season the outside at all before roasting?

I made this for my then girlfriends family 3 year agos and her mother was almost insulted when I told her how I did it. Fast forward to now. She's now my mother in law and refuses to let anyone but Me cook the turkey

2023 and still using this recipe ! I always get complicated on how juicy the Turkey is without having to overly smother it with butter to compensate. Thank you !

This recipe for a brine is a yearly tradition for our family’s Thanksgiving. I deep fry a turkey every year for my son and family. The juiciest most delicious bird we ever had. Thanks Alton and family . Making it entertaining and educational.

If im brining the turkey in the fridge using a brine bag, do i need all that ice included? I understand why you need to add a gallon of water just wasnt sure if the ice is super necessary

If you’re doing this brine (or any brine) try this as well-brine as directed. And Wednesday night (if eating turkey Thursday afternoon) remove from brine, rinse, dry and season generously with any poultry rub you like. Place on a roasting pan and leave uncovered overnight. It will dry the skin slightly and help render a more crispy skin.

I’ve been using this brine since this episode of good eats actually aired, it turns out good everytime, I’ve found other recipes I’d like to try but then I end up scrapping the idea and go back to this , I do have to end up buying a new bucket every year because no matter how hard I try it inevitably ends up be used to wash the car or something same with the candied ginger, I buy a container every year and I’ve yet to find another use for it

Once I watched this episode of "Good Eats," I won't cook my turkey any other way. Brining really does make it so much jucier and flavorful. It is worth the effort to make and use the brine. Rather than a whole turkey, I brine a couple turkey breasts because I don't like the dark meat.
