Sauteed Shredded Brussels Sprouts

Yield: 4 to 6 servings

Ingredients

2 (12-ounce) packages fresh Brussels sprouts, trimmed
2 tablespoons unsalted butter
2 tablespoons good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon syrupy balsamic vinegar

Directions

Place the Brussels sprouts in the feed tube of the food processor fitted with a large slicing disk. (You don’t need to core them.) Process until they’re all sliced.

Heat the butter and olive oil in a very large (12- to 14-inch) sauté pan over medium to medium-high heat. Add the Brussels sprouts, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper and saute, stirring occasionally, for 5 to 7 minutes, until crisp-tender and still bright green. Off the heat, stir in the balsamic vinegar, season to taste, and serve hot.

    I fell in love with brussels sprouts when I was 6 years old. No one in my family Understood why. So nowadays, I still eat them at least once or twice a week. They’re yummy. And whatever Chyna cooks is off the charts and truly delicious.

    We all adore Ina. She is a national treasure. However I am a little worried about the amount of salt that is recommended in some of these dishes.

    I am with you on boiling or steaming! Yuck, After eating them roasted and sautéed on the stove. I feel the same about cabbage. It has to be fried. I won't eat them any other way. Except your way now. Thanks for the tutorial. I have to find my disc for my food processor.

    Have you ever notice how many African-Americans guess that she invited to her home or her show over the last 20 years?

    1, 2 or 3 at the most….

    I stopped watching her show over ten years ago because I noticed that NONE of her friends or guests were NEVER African Americans….

    I've heard stories of some people hating Brussels Sprouts when they were young, but not me! These were and are one of my favorite vegetables! I used to eat them all the time when I was little! These good, Ina!

    I once had Thanksgiving dinner guests tell me they did not like brussel sprouts. I shredded the sprouts, sauteed them in bacon fat, added salt and pepper and some apple juice, and put the crumbled bacon on top. I told them it was cabbage. They all had second helpings.

    I've come to enjoy brussel sprouts a lot more as an adult than as a kid because I guess my taste buds have faded a bit and they aren't as harsh to eat anymore so I will actually go out and buy them every so often!

    She added salt 3x times to try to flavour and make taste should have added garlic or other herbs/spices she had to keep adding salt for them to taste of anything!!!

    I will definitely try this method in the future, along side a pork roast perhaps. I've been roasting Brussels sprouts for many years. My secret is to use a maple infused balsamic for a touch of sweetness.

    This is how I do mine. I add bacon pardons at the end that I'd fried up before the sprouts

    I like to steam mine, then put them in zesty Italian dressing, chill overnight, stirring a few times. After almost 24 hrs, they taste SO good, even cold, which is my fav. way to eat them. For max flavor, 1/2 them before marinating them, so the dressing can get in all the nooks and crannies.
