I dont get people's obsession with HEAT HEAT HEAT in their food. I'm a retired chef, I've worked in tons of different ethnic restaurants, including some where heat is part of the food culture, and nothing will ever convince me that excess heat is a necessary component of good food. Yes, a little heat is nice, because it makes the taste buds more sensitive, but there's an upper limit to that, and eventually, you actually lose the ability to recognize the subtleties in flavor, once you hit that upper limit of heat.

I can make intricate, complex dishes, with incredible layers and depths to the spices…things that will give the most jaded foodie a full blown mouthgasm.

Yet, at so many places you go to eat nowadays, everyone just wants food that's 'extreme'.

It's sad, and more than a little disheartening, at least for someone who actually knows a thing or two about good food.

tl;dr 'Hot' is not a flavor, dammit!
