Baked Shrimp Scampi
Recipe courtesy of Ina Garten
Total: 43 min
Prep: 30 min
Cook: 13 min
Yield: 6 servings
Level: Easy

Ingredients

2 pounds (12 to 15 per pound) shrimp in the shell
3 tablespoons good olive oil
2 tablespoons dry white wine
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
4 teaspoons minced garlic (4 cloves)
1/4 cup minced shallots
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko (Japanese dried bread flakes)
Lemon wedges, for serving

Directions

Preheat the oven to 425 degrees F.

Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.

In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.

Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

I love that Ina said she has to make a dish a couple times to make sure the flavor is exactly how she wants it. She makes it look so effortless, I just assume everything turns out perfectly the first time for her😊

I've enjoyed watching her videos but I find the Latin music really off and out of place for a nice Jewish lady on the east end of Long Island.

This was hands down the best shrimp scampi I’ve made. I followed the directions with one exception, I didn’t use any rosemary. My shrimp seemed much smaller than Ina’s, but they cooked perfectly. The only thing I will change the next time I make this dish, will be removing the tails from the shrimp. Mine did not sit upright like hers and it made getting the topping evenly browned under the broiler more difficult.

Where are you when we need a REAL cooking show. There is no more cooking shows that actually demonstrate how to execute a recipe. I am SO TIRED of watching an ugly man shove EVERYTHING in his mouth and TRYING to be a comedian while eating. You have the most relaxing voice, I miss you.

This was the worst scampi recipe i have ever made. After 10 minutes at 425 the butter wasn’t even melted. You should melt the butter and all the other ingredients if you want it yo cook.

Okay, sounded good until you introduced the "Italian" parsley, aka cilantro! The most disgusting herb I have ever tasted. it tastes the way you would imagine how really STINKY gym shoes would taste. Absolutely disgusting, like dish soap. I can imagine that only an old unwashed jock strap could taste worse 🤢🤮

    December 29, 2023 at 3:35 am

Oh yeah, oxymoron time… jumbo shrimp! We often use the word "shrimp" to refer to something small. I prefer "prawn." LOL

Why would you leave the tails on?? Should you eat this with your fingers or if with a fork, do you CUT the tail off the shrimp as you’re eating? I mean for shrimp cocktail, that’s one thing, but to cook shrimp with tails on is just plain dumb.
