    BRUCE , FROM SHELTER ISLAND. A REAL CHOWDER CHEF WOULD NOT STEAM THE CLAMS. THE COOK WOULD SHUCK THE CLAMS OVER A SIVE, SAVING THE LIQUOR. STEAMING DILUTES THE CLAM BROTH.     Instead of adding the booze for acidity, a combo of lemon, lime and/or Werstershire Sauce mix adds additional depth.
