Carbonara Classica

Yield: 6 servings

Ingredients

1 1/2 cups 1/4-inch diced pancetta
5 organic large eggs
1/2 cup grated Parmigiano-Reggiano
1/2 teaspoon fresh cracked black pepper
1/8 teaspoon cayenne pepper
1 pound bucatini
1 cup frozen peas
1 tablespoon kosher salt
1 tablespoon chopped Italian parsley, for garnish

Directions

In a medium saute pan over medium heat, cook the pancetta until tender-crisp. Remove to a paper towel-lined plate and set aside. Reserve the pan with the drippings.

Separate 4 of the eggs and set the yolks aside. Discard the 4 whites. Crack the fifth egg and add it to the yolks.

In a large bowl, whisk together the egg yolks, 2/3 of the pancetta, the Parmigiano-Reggiano, black pepper and cayenne.

Cook the pasta until al dente. Add the peas when the pasta is just about finished and strain both into the reserved pancetta drippings. Reserve about 3/4 cup pasta water to fortify the sauce.

Add the egg mixture into the pasta and toss well with tongs for about 1 minute. Add the reserved pasta water to the bowl in 1/4 cup increments, combining and adding until desired sauce consistency is reached. Add the parsley and gently combine and place into a serving dish.
Garnish with the reserved pancetta.

    Pasta with scrambled eggs and peas, not carbonara classica. And remove the rings from the fingers when cooking, they look disgusting.

    Pancetta? Maybe. Cayenne? No. Peas? HELL NO. Parmesan? Maybe. Parsley? HELL NO. Carbonars is Pasta, Guanciale, Eggs, Pecorino Romano, and Pepper. That's it. You can maybe use Pancetta if you can't find Guanciale, and maybe use Parmesano Reggiano if you can't find Pecorino Romano. I have no idea what he just made, but it is most certianly not Carbonara.

    Guanciale if not then use pancetta.. if you have to use bacon don't bother makin. I'd call this Americanized… But he is a great cook!!!

    Peas? I mean, it's not shame to not know the things, but if you going to make a video show, at least google the god damn Carbonara and see the right recipe. At the end, your eggs got scrambled, your pan was too hot.

    Revolting as usual! By the way Guy Fieri was born Guy Ramsay Ferry. Not a single drop of Italian blood in him and you can tell by this horror show. There sure is a lot of "Ramsay" in him though and it shines right through. This dish is not fit for dogs.

    I would throw this in the bin. Just by adding peas loses the dish's authenticity. Learn to cook it the proper way and you will see that it is amazing as it is. If you want to eat peas, find a different recipe. Don't f**k up a carbonara like this.
