Sunny’s Easy Brie Brittle with Fig Dip

Ingredients

Two 9-ounce bags mini Brie bites, sliced 1/4-inch thin (discard the rounded ends)
1 cup fig jam
1/4 cup orange juice
1/4 cup chopped golden raisins
1 teaspoon white wine vinegar
1/2 teaspoon chopped fresh thyme
Kosher salt

Directions

Cut a shallow slice through the rind halfway along the curved edge of each slice of Brie. Place the Brie slices on a microwave-safe plate lined with parchment paper. Microwave until they turn slightly golden and puff up, 1 to 3 minutes, depending on your microwave strength. Allow them to cool.

In a small saucepan on medium-low heat, add the fig jam, orange juice, raisins, vinegar, thyme and a small pinch of salt. Cook until the raisins are tender, 5 to 8 minutes. Serve warm, at temperature or chilled with the prepared Brie bite brittles.
