Food Network’s Best French Toast 🍞

One of our secrest to the BEST French toast is toasting thick slices of bread ~before~ soaking them for both a more custard-like texture!

The Best French Toast

Ingredients

1 loaf pain de mie, brioche or challah
10 large eggs
2 cups half-and-half
1/4 cup packed light brown sugar
1 tablespoon pure vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon kosher salt
1/8 teaspoon ground nutmeg
1/2 stick (4 tablespoons) unsalted butter, plus more for serving
Maple syrup, for serving
Confectioners’ sugar, for serving

Directions

Arrange a rack in the center of the oven and preheat to 300 degrees F.

Cut the bread into 8 slices about 3/4-inch thick. Arrange them in a single layer on a rimmed baking sheet (it’s ok if they overlap). Bake, flipping them halfway through, until very lightly golden on both sides, about 12 minutes. Let them cool on the baking sheet until ready to use. Reduce the oven temperature to 200 degrees F.

Vigorously whisk the eggs in a large bowl until blended and no streaks of whites remain. Add the half-and-half, sugar, vanilla, cinnamon, salt and nutmeg and whisk until completely incorporated. Transfer to a 2-quart baking dish.

Gently press 2 slices of the toasted bread into the custard. Turn to coat and then gently press down on the bread until you feel it start to soak up the custard—this is key for a luscious, moist texture. Let the bread soak for about 1 minute per side; it should feel heavy but still hold its shape and not fall apart.

Melt 1 tablespoon of the butter in a large nonstick skillet over medium-low heat. Cook 2 of the soaked bread slices until they are a deep golden brown, the custard has set and the insides are cooked through, 4 to 5 minutes per side. The center of the bread will puff slightly while the crust will contract, making it look puckered. You may have to alternate between medium and medium-low heat if the bread browns too quickly or not fast enough. Transfer the slices to a rimmed baking sheet and hold in the warm oven. Repeat with the remaining butter and bread.

Serve the French toast with butter, maple syrup and a sprinkle of confectioners’ sugar.

Best Tomato Soup Ever

Ingredients

1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Directions

To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.

Now dump in the diced tomatoes and stir to combine. Add the tomato juice.

Next – and this is important – in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you’ll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it’s worth, and I realize it’s not worth much, I use 6 tablespoons of sugar.)

Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.

Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.

Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.

Serve the soup warm!

Tamarind Chutney

Ingredients

1 tablespoon vegetable oil
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon Kashmiri red chile powder
1 cup jaggery or dark brown sugar
1 cup tamarind paste
1/4 cup seedless dates
1/4 cup raisins
1 teaspoon chopped fresh ginger
1 teaspoon chaat masala
1 teaspoon ground ginger
1/2 teaspoon kala namak (black salt)
Kosher salt

Directions

Heat a large skillet over medium-low heat. Add the oil, cumin, coriander, fennel and red chile powder and cook until toasted and fragrant, about 2 minutes. Add the jaggery, tamarind, dates, raisins, fresh ginger and 2 cups water. Bring to a boil, reduce to a simmer and cook until the mixture is thick enough to coat the back of spoon, 8 to 10 minutes. Remove from the heat.

Stir in the chaat masala, ground ginger, kala namak and salt to taste. Transfer to a blender and blend until smooth.

Panch Puran Chutney

Ingredients

1 tablespoon vegetable oil
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1/2 teaspoon fenugreek seeds
1/2 teaspoon black mustard seeds
1/2 teaspoon onion seeds (kilonji)
2 pounds tomatoes, chopped
1 cup packed brown sugar
1/2 cup distilled white vinegar
1 tablespoon tomato paste
1/2 teaspoon Kashmiri red chile powder
Kosher salt

Directions
Heat the oil in a large high-sided skillet over medium-low heat. Add the cumin seeds, fennel seeds, fenugreek seeds, mustard seeds and onion seeds and when they start to crackle, add the tomatoes. Stir in the brown sugar, vinegar, tomato paste, chile powder and salt to taste, bring to a simmer and cook, stirring occasionally, until the mixture is reduced by half, 20 to 25 minutes.

“Bars” are a very important section in any church cookbook and at any potluck around Minnesota. Any dessert baked in a pan and cut into a square or rectangle is classified as a bar and they’re great for easy transportation and feeding large crowds. Molly loves them because they’re versatile, often soft and gooey, and so geometrically pleasing to cut. With these bars, she’s upping the umami ante and combining miso into the caramel layer for a sweet and salty hit that’s out of this world.

Miso Millionaire Bars

Yield: one 8-inch square pan

Ingredients

Crust:
1 1/2 cups (195 grams) all-purpose flour
1/2 cup (100 grams) sugar
1/2 teaspoon kosher salt
3/4 cup (1 1/2 sticks; 170 grams) unsalted butter, cold and cubed
1 teaspoon vanilla extract

Caramel:
One 11-ounce (311-gram) bag store-bought caramels
1 tablespoon white miso paste

Chocolate:
6 ounces (170 grams) bittersweet chocolate, chopped
3 tablespoons (45 grams) heavy cream
Flaky salt, for sprinkling

Directions

Preheat the oven to 350 degrees F. Grease an 8-inch square metal baking pan and line with enough parchment paper to allow for 1-inch wings on opposite sides.

In a food processor, combine the flour, sugar, salt, butter, and vanilla. Pulse to form a shaggy dough. Once the dough is combined, press into your prepared pan and bake for 20 minutes or until golden brown. Let cool.

Once the crust is cool, add the caramels and miso to the bowl of a double boiler and stir until melted and smooth. Pour over the crust and refrigerate until set.

Place the chocolate and heavy cream in a second bowl and place over the simmering water and stir until completely melted and fully combined. Pour over the set caramel layer and sprinkle flaky salt on top and place back in the fridge for 30 minutes until the chocolate is firm. Slice into bars and enjoy!
