Strawberry and Prosecco Scones with Sparkling Lemon Icing
RECIPE COURTESY OF JEFF MAURO
Level: Easy
Total: 1 hr 30 min (includes cooling time)
Active: 30 min
Yield: 8 scones

Ingredients

2 cups all-purpose flour, plus additional for dusting
4 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
6 tablespoons cold unsalted butter, cut into pieces
1/3 cup buttermilk
1/4 cup prosecco, or more as needed
2/3 cup hulled and chopped fresh strawberries
1/3 cup white chocolate chips
Sparkling Lemon Icing, recipe follows
Zest of 1 lemon

Sparkling Lemon Icing:
1 cup confectioners’ sugar, plus additional as needed
Zest of 1 lemon
Pinch kosher salt
1 to 2 tablespoons prosecco

Directions

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.

Pulse together the flour, granulated sugar, baking powder and salt in a food processor. Add the butter and pulse until pea-sized butter balls form, about 20 seconds. Turn out into a bowl.

Whisk together the buttermilk and prosecco in another bowl and gently mix together with the dry ingredients. Gently fold in the strawberries and white chocolate chips. (The dough should be dry, but if it looks very dry and isn’t coming together into a loose dough, add in a splash or two more of prosecco.)

Gently roll out the dough on a lightly floured surface into a circle about 1 1/2 inches thick, then cut into 8 wedges. (See Cook’s Note.) Transfer to the parchment-lined baking sheet and bake until golden brown, 16 to 18 minutes. Let cool completely, then drizzle with Sparkling Lemon Icing and sprinkle with fresh lemon zest.

Sparkling Lemon Icing:

Yield: 1/4 cup icing

Whisk together the confectioners’ sugar, zest, salt and 1 tablespoon prosecco. If too thin, add more sugar; if too thick, add more prosecco.

Cook’s Note: The circle of dough can be frozen up to 1 month. Defrost at room temperature before cutting and baking.

the way jeff says SPARKLING LEMON ICING – is a full slay 💅😋Another full slay would be switching out that old AP flour for our One Mighty Mill stone-milled organic ap flour. We created One Mighty Mill when we realized there was a systemic issue with how we farm and process wheat in the U.S.. For too long, industrial flour (and many other industrial foods) have been damaging our health and the planet. Industrial flour is made from wheat that's been grown with pesticides & harmful farming chemicals & then roller milled. This process produces flour from the shelf-stable center endosperm, but discards the nutrient-rich (but highly perishable) bran & germ. We are on a mission to fix flour by following a time-worn tradition of milling. We stone-mill 100% USDA certified wheat from our partner farmers so that our flour gets all of its natural nutrients and flavor. We would be happy to send your some to take these scones to the NEXT LEVEL

Scalloped Potatoes
RECIPE COURTESY OF MOLLY YEH
Level: Easy
Total: 2 hr (includes cooling time)
Active: 35 min
Yield: 4 to 6 servings

Ingredients

2 tablespoons unsalted butter, plus more for greasing
3 tablespoons all-purpose flour
1 1/2 cups whole milk
1/4 teaspoon ground nutmeg
1 teaspoon kosher salt
Freshly ground black pepper
4 ounces Gruyere, shredded
Nonstick cooking spray, for the baking dish, optional
2 pounds Yukon gold potatoes, peeled and sliced 1/8-inch thick
6 ounces thick-cut ham, diced
1/2 cup chopped fresh chives

Directions

Preheat the oven to 350 degrees F.

In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Whisk in about 1/2 cup milk and cook, whisking, until thickened. Add another 1/2 cup milk and cook, whisking, until thickened, about 3 minutes. Add the remaining 1/2 cup milk and cook, whisking, until thickened, another 3 to 4 minutes. Add the nutmeg, 1/2 teaspoon salt, a few turns of black pepper, and half the cheese. Cook gently for a few minutes, making sure all the cheese is melted.

Grease or butter an 8-inch square baking dish. Arrange half of the potatoes all over the bottom. Sprinkle with 1/4 teaspoon salt. Layer in half of the cream mixture, then sprinkle on the ham and half of the chives. Arrange the other half of the potatoes on top, then sprinkle with the remaining 1/4 teaspoon salt, remaining cream, remaining shredded cheese and remaining chives. Cover and bake for 45 minutes, then uncover and bake until browned on top, an additional 20 minutes. Let cool slightly, then serve.
