Wild Mushroom and Sun-Dried Tomato Farrotto (Farro Risotto)
RECIPE COURTESY OF GUY FIERI
Level: Easy
Total: 1 hr 20 min
Active: 35 min
Yield: 4 to 6 servings

Ingredients

1 cup farro
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
3 cups assorted wild mushrooms (cremini, shiitake, oyster, wood ear), cleaned and roughly chopped
2 cloves garlic, minced
1 shallot, finely diced
1/2 cup dry white wine
6 cups (1 1/2 quarts) low-sodium chicken stock, warmed
1/2 cup diced rehydrated sun-dried tomatoes
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/2 cup finely grated Parmesan
1/2 cup sour cream
3 tablespoons chopped fresh flat-leaf parsley

Directions

Place the farro in a large pot of cold water and bring to a boil. Simmer for 15 to 20 minutes to par-cook the farro, and then drain and set aside.

In a heavy-based pot, add the butter and oil. Add the mushrooms, garlic and shallots and saute until just tender, 3 to 5 minutes. Deglaze with the white wine. Add the drained farro and stir to combine. Add the chicken stock to the pot a little at a time, ensuring at each addition that the liquid has been completely absorbed by the farro. Keep stirring and adding the stock until the mixture is thick and creamy.

Add the sun-dried tomatoes. Season with salt and pepper, and then add the Parmesan, sour cream and parsley.

Fresh Apple Spice Cake
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 1 hr
Active: 15 min
Yield: 9 to 12 servings

Ingredients

1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran’s, heated

Directions

Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.

Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.

Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.

Get the secret to Ina’s seriously crispy bacon! 🥓

Published

She’s teaching Jeffrey all her tricks for perfect bacon every time.

Tune in to an all-new episode of #BeMyGuest Saturday at 12|11c!

Get the recipe 👇

Seriously Crispy Bacon
Recipe courtesy of Ina Garten
Level: Easy
Yield: Serves 4

Who doesn’t want perfectly crisp bacon? The trick in this recipe is dusting the slices with Wondra flour before baking them. Perfectly crisp bacon every time! And no greasy mess.

Ingredients

12 ounces thick-cut bacon (see note)
2 tablespoons Wondra flour

Directions

Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.

Arrange the bacon in one layer on a board. Put one tablespoon of the flour in a fine-meshed sieve and dust the bacon lightly and as evenly as possible with the flour. Turn the bacon and dust the other side with one more tablespoon of flour.

Transfer each slice of bacon, shaking off any excess flour, to the prepared baking sheet, placing them in one layer very close to each other. Bake for 12 minutes. With metal tongs, turn each strip of bacon and bake for another 5 to 10 minutes, until nicely browned. Transfer the bacon to a cooling rack. Serve warm or at room temperature.

Cook’s Note
Choose bacon that is cut thicker than the usual grocery store brands, such as Nodine’s Applewood Smoked or D’Artagnan.
