    Geez Guy you’re sucha smuck…..no way where these dumplings gonna puff up like you said….do you know anything of cooking? Nope!!!!

    Add a little salt and pepper to the flour before you make the dumplings……. That will set the meal on FIRE!!!!

    Those aren't "old school" chicken and dumplings. Those are crappy southern chicken and dumplings. Chicken and dumplings originated in the north and they're supposed to be fluffy. Also make the biscuit dough with buttermilk and add some buttermilk to the broth. It's heaven. I'm tired of seeing people go nuts over crap dumplings like the ones at Crapperbarrel.

    As far as I know, dumplings are round and puffy dropped by spoonfuls in hot boiling broth to cook.
    I make noodles by rolling out my dough and air drying a bit before putting them in boiling broth. I always make my own stock by boiling down the bones with celery, onions and carrots and bay leaves. I strain out the solids and use it for my stock. Shredded chicken goes in after the noodles are cooked as well as other spices.

    Only things I see missing is a side of fried okra, some zipper peas and a tall glass of sweet tea. This look excellent and exactly like we make them down in south Georgia.

    This restaurant is closed permanently now. 😫 I feel like it's bad luck to any restaurant that gets featured on that dudes TV show as the place ends up closing down after being on it…suspicious.

    Now this is homemade chicken and dumplings…yes you need that extra flour to make that gravy thicken up!! No peas and carrots in it!!! Yesss looks soooo good! Like my mother made hers!

    This the traditionally how you make chicken and dumplings. What we see now is the the modern take, where it's basically a chicken pot pie, but the crust is formed into biscuits and then dalloped on top of the chicken stew.

    Those are NOT dumplings! They are icky flat noodles! Dumplings are light, fluffy biscuits cooked in the "stew". Why do they call them dumplings when they are just fat, tasteless noodles!

    One thing I remember from this segment in particular, Arnold's received the James Beard Foundation Award. When someone or somewhere wins that, you know their food is the real deal. These chicken and dumplings, when Guy said he wants to eat that…if I ever go to Nashville and find myself at Arnold's, that's exactly what I'm getting too!

Panko-Crusted Salmon
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 35 min
Prep: 15 min
Inactive: 10 min
Cook: 10 min
Yield: 4 servings

Ingredients

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Directions

Preheat the oven to 425 degrees.

In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.

Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.

Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.

Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.
