Perfect Roast Turkey

Total: 3 hr 20 min
Prep: 30 min
Inactive: 20 min
Cook: 2 hr 30 min
Yield: 8 servings
Level: Intermediate

Ingredients

1/4 pound (1 stick) unsalted butter
1 lemon, zested and juiced
1 teaspoon chopped fresh thyme leaves
1 fresh turkey (10 to 12 pounds)
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme
1 whole lemon, halved
1 Spanish onion, quartered
1 head garlic, halved crosswise

Directions

Preheat the oven to 350 degrees F.

Melt the butter in a small saucepan. Add the zest and juice of the lemon and 1 teaspoon of thyme leaves to the butter mixture. Set aside.

Take the giblets out of the turkey and wash the turkey inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the bunch of thyme, halved lemon, quartered onion, and the garlic. Brush the outside of the turkey with the butter mixture and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.

Roast the turkey about 2 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 20 minutes.

Slice the turkey and serve.

    I have done this the last 3 Thsnksgivings and it's always perfect!! No more brining or that mess. Trust this recipe. I have a 14lb bird thus year so I'll add 20-25 mins cooking time just like last year and guests will rave. Trust Ina!!

    This recipe is exactly what I was looking for. So many recipes call for wet or dry brining for anywhere from 24-72 hours in advance, lots of other requirements that were more time than I had available. I just needed a recipe for a bird that was fully thawed and ready to roast and this recipe was perfect.

    My mom use to slow roast her's overnight, & take it out in the early morning, & prepped the gravy. Then she'd heat it all up when it got around the time to seeve

    I think I “know” this lady. I’ve seen her before. I think it’s her. Cuz I remember the nice kitchen she was always in & it reminded me of a beach kitchen.

    Anyone get irritated by listening to her suck air through her mouth, after every time she says something? Lol head phones makes it worse. Turkey did look good.

    I did this exact recipe with a 15 lb turkey. Added 25 mins for cook time between 12 and 15 lbs. . It was perfect!! Family raved. Flavor…juicy. excellent.

    Just curious, first time with this recipe and I am confused by the instruction," put the instant thermometer in sideways" to measure the meat temp. Do I insert from the top of the Turkey near the neck end? or Do I insert parallel to the counter top between the leg and wing? Thanks so much to any advise… my turkey is cooking…. 😉

    Why doesn't she check the final temperature of the bird with an accurate thermometer? Just eyeballing the finished product is a bit risky.

    I always get done cooking the turkey and when I go to cut the dark meat, it’s so bloody. I can’t seem to get it right. The thermometer read properly but still an issue. Not sure what else to do. Our turkeys are around 22-24 lbs. any suggestions? Plus the legs are so dry too. Breast meat usually is perfect though.

    I did this recipe same routine but put in a little extra I stuffed it with celery, oranges, carrots, apples, Rosemary, tyme ,garlic, lemon ,peppercorns,onion and it came out outstanding I got so many compliments on my bird everybody said that it was tasty and juicy and I did not have to add so much salt and pepper

    What?…. Recipe and video do not match. In the video, she did not salt & pepper the cavity of the bird. In the recipe, she does not mention to place the butter mixture under the turkey's skin. Following either one may ruin the holiday. Have no idea where the 5-star rating comes from. Can't trust anything on You-Tube

    Totally chefs agree do not put bread stuffing in a bird to roast….add the veggies shown here or you favorite. PS why bother with tiny salt and pepper measurements haha
