Kevin’s Grandma’s Mac

Yield: 4 servings

Ingredients

Pan:
8 ounces elbow pasta
1 tablespoon salted butter
8 ounces sharp Cheddar cheese, shredded

Sauce:
2 tablespoons salted butter
2 tablespoons all-purpose flour
2 cups whole milk
Kosher salt and freshly ground black pepper
8 ounces processed cheese, cut into small cubes

Ingredients

For the pan: Bring a pot of water to a boil. Add the pasta and cook until al dente according to the package instructions.

Butter the bottom and sides of a 9-by-9-inch baking dish or aluminum pan. Add the cooked pasta.

Preheat the oven to 350 degrees F.

For the sauce: In a large pot over medium heat, add the butter and heat until melted. Add the flour and cook, stirring, until the mixture smells like popcorn, about 5 minutes. Slowly add the milk, stirring or whisking while adding. Taste and season the pot with salt and pepper. Add the cheese cubes and stir until melted.

Pour the sauce over the pasta and gently shake the baking dish to settle the sauce in the nooks and crannies. Top with the shredded Cheddar and bake until the corners are brown, 25 to 30 minutes.

    Elbow macaroni layered with a ton of Colby cheese, season with black pepper, paprika and a little salt. Throw in the microwave for five minutes and that's all you need. 🌟🌟🌟🌟🌟

    That looks really delicious. I might make this for Thanksgiving! Usually, I've made mac & cheese with shredded sharp cheddar, no processed cheese cubes, and a hint of cayenne for spice and it's been yummy but this looks great too and I'm always looking to try a wide variety of mac & cheese recipes.

    Sigh. So first off, the goal was to create a Mac n Cheese where each of four guests/hosts on the show that day added something to the dish. Sunny chose the cavatappi pasta and Katie was in charge of the sauce. The guests, Nancy and Valerie, added the vegetables and the topping respectively. I will say, the Facebook video that I think this comes from very much removes a lot of this context, but nevertheless, if you’re interested you can find a slightly longer video on the Food Network website ( https://www.foodnetwork.com/videos/ultimate-mac-and-cheese-0279725 ) makes this more clear.

    Also let me play devils advocate here: Folks, just make Mac n Cheese however you want. This version was obviously supposed to just be kind of something that was fun for the show, but then got passed off as though this was Katie’s doing. This experimental version definitely doesn’t appeal to me personally but I can appreciate the attempt to try something new. They clearly could have made a standard Mac n Cheese, but how many videos can you find like that? Thousands if not more. Also What is life without taking some risks and shaking things up once in a while? Trying new things is a fundamental instinct of many artists, cooks and chefs alike. Sometimes it doesn’t work out or doesn’t appeal to most people. It’s part of the process. Also a lot of recipes call for Gruyere and eggs so…I’m not sure what the problem is.

    So many of the comments here are like “oh man is Katie mad”, but is she actually though? And why should she be? It wasn't her recipe alone. I think Katie is actually a pretty good sport here (again she wasn’t even responsible for everything in the dish which she even says in the video.) I have to believe they told her ahead of time that they were going to do this (if not then even more kudos to her), and I think most jumped to this because it’s how we might have felt had this happened to us (ie I think most of us would be pretty defensive if asked to endure criticism like this on national television for something that wasn’t even our own doing). Even here in the comments she’s being shamed as though she did something seriously wrong, but what did she actually do that was wrong?! I also think there is an unstated subtext about race, class, and gender, but I’m not touching that with a ten foot pole. The main point is that no one needs to get upset over Mac n Cheese. Eat what you like, add what you like, but there’s no sense in making this into what the comments here make it out to be.

Panko-Crusted Salmon
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 35 min
Prep: 15 min
Inactive: 10 min
Cook: 10 min
Yield: 4 servings

Ingredients

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Directions

Preheat the oven to 425 degrees.

In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.

Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.

Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.

Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.
