The Hungarian version is called Halushka.
My grandmother was from Hungary and used to make it almost every time I visited her.
Minus the bacon and add red pepper flakes to spice it up.

well, call it rather cabbushki. Haluski exactly means small dumpling from potato dough similar to italian gnocchi. They can be mixed with any kind of topping. What do you do is any king of italian pasta with cabbage topping.

I’m Polish and didn’t know about this until seeing the episode when it originally aired. My 100% Polish grandparents had never heard of it either. I made it years ago and it is now one of our family’s absolute favorites. Only difference I make is that I don’t steam the cabbage on its own. I cook it and the onions in the bacon fat that is left over after cooking the bacon! Yum! I want some now!

Apple Crisp
RECIPE COURTESY OF REE DRUMMOND
Level: Easy
Total: 1 hr 20 min (includes cooling time)
Active: 20 min
Yield: 8 to 10 servings

Ingredients

Apples:
Salted butter, for the baking dish
8 medium Granny Smith apples, peeled, cored and sliced
1 cup granulated sugar
1 heaping tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt

Topping:
1 cup all-purpose flour
1 cup quick-cooking oats
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of kosher salt
1 stick (8 tablespoons) salted butter, melted
Ice cream or frozen custard, for serving

Directions

For the apples: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with butter.

Arrange the apple slices in the prepared baking dish in an even layer. In a bowl, mix together the granulated sugar, flour, cinnamon and salt. Sprinkle the mixture over the apples, then pour 1/2 cup water over top.

For the topping: In a separate bowl, mix the flour, oats, brown sugar, baking powder, baking soda and a pinch of salt. Stir while drizzling in the melted butter. Sprinkle the topping in an even layer over the apples.

Bake until the topping is slightly crisp and golden brown, about 43 minutes. Serve warm or at room temperature on its own, with ice cream or with frozen custard.

These days, she takes generations of family recipes and makes them her own as she cooks for family and friends at her Sea Island home.

Grandma’s Old-Fashioned Baked Mac ‘N’ Cheese
RECIPE COURTESY OF KARDEA BROWN
Level: Easy
Total: 1 hr 50 min (includes cooling time)
Active: 30 min
Yield: 12 servings

Ingredients

1/2 cup (1 stick) unsalted butter, melted, plus more for the baking dish
1 pound elbow macaroni
1 teaspoon kosher salt, plus more for the pasta water
Two 12-ounce cans evaporated milk
1 3/4 cups heavy cream
6 large eggs
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
Three 8-ounce blocks extra-sharp Cheddar, shredded
One 8-ounce block sharp Cheddar, cut into 1/2-inch cubes
Nonstick cooking spray, for the foil

Directions

Preheat the oven to 350 degrees F. Grease the inside of a 9-by-13-inch baking dish with butter.

Cook the macaroni to al dente according to the package directions in boiling salted water. Drain the pasta and return to the pasta pot or pour into the prepared baking dish. Add the butter and stir until combined.

Whisk together the evaporated milk, heavy cream, eggs, garlic powder, salt and pepper in a large bowl; add to the macaroni. Set aside 1 cup shredded extra-sharp Cheddar for the top. Stir in the remaining shredded cheese and cubed cheese. Sprinkle the reserved shredded cheese evenly over the top.

Cover the dish with aluminum foil (coat the underside with nonstick cooking spray). Bake until the pasta is bubbly, about 40 minutes. Uncover and bake until the cheese is browned, 15 minutes longer. Remove from the oven and let stand 15 minutes before serving.

Cook’s Note: Brown the macaroni under the broiler for 5 minutes if needed.
