Garlic and Cheese Popovers
RECIPE COURTESY OF GIADA DE LAURENTIIS
Total: 38 min
Prep: 8 min
Cook: 30 min
Yield: 12 popovers

Ingredients

Butter:

1/2 cup (1 stick) unsalted butter, at room temperature
2 tablespoons anchovy paste
1 tablespoon chopped chives
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon lemon zest
Kosher salt and freshly ground black pepper, optional

Popovers:

Vegetable oil cooking spray
6 large eggs, at room temperature
5 cloves garlic, minced
2 cups whole milk, at room temperature
1 1/4 cups (3 ounces) finely grated Asiago cheese
1/4 cup (1-ounce) shredded sharp Provolone cheese
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped flat-leaf parsley

Directions

Butter: In a small bowl, mix together the butter, anchovy paste, chives, lemon juice, and lemon zest until smooth. Season with salt and pepper (if using), to taste.

Popovers: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a 12-count muffin or popover pan with vegetable oil cooking spray. Set aside.

In a blender, add the eggs and garlic. Blend on medium speed until frothy, about 15 seconds. Add the milk and the cheeses and blend until smooth. Add the flour, salt, pepper and parsley. Blend on medium speed until incorporated. Pour the batter into the muffin cups, filling each cup to within 1/4-inch of the top. Bake, without opening the oven door, until puffed and golden, about 30 to 35 minutes. Remove the popovers from the oven and serve with the anchovy butter.

Those are the worst looking popovers ever. There is too much weight to make them rise. May be flavorful but certainly look awful. A total fail from that perspective.

How to Make Stephanie’s Carolina Reaper Gummies

Published

on

These gummies might look cute, but they’re made with the second HOTTEST chile peppers in the world.

Don’t miss the final episode of #HalloweenBakingChampionship, tonight at 9|8c.

Get the recipe 👇

Carolina Reaper Gummies
Recipe courtesy of Stephanie Boswell
Level: Advanced
Total: 8 hr 20 min (includes chilling time)
Active: 20 min
Yield: about 100 gummies

Care to test your mettle? Think chicken wings are kids’ stuff? The heat in these insanely spicy gummy candies comes from Carolina Reapers, the second hottest chile peppers in the world (maniacal laughter). Be warned: The gummies are not for the faint of heart, so take caution.

Ingredients

Gummies:
44 grams powdered gelatin (1/4 cup plus 1 tablespoon plus 1 teaspoon)
Nonstick cooking spray, for the molds
228 grams sugar (1 cup plus 2 tablespoons plus 2 teaspoons)
228 grams glucose syrup (3/4 cup)
28 grams sorbitol (1/4 cup plus 1 teaspoon)
1 to 3 tablespoons Carolina Reaper paste (pureed Carolina Reaper peppers), powder or dried peppers processed in a food processor, or to taste depending on how hot you want these to be (see Cook’s Note)
2 teaspoons citric acid
1/8 teaspoon cherry extract, or more to taste
Red or desired color food coloring, as needed

Coating:
1 cup sugar
1/4 cup citric acid

Directions

Special equipment: three 40-cavity silicone mini skull molds (each cavity about 1 inch long by 3/4 inch wide); food prep gloves; an eye cover

For the gummies: Mix together the gelatin and 150 grams water (2/3 cup) in a medium bowl and allow to bloom, about 3 minutes.

Oil three 40-cavity silicone mini skull molds with cooking spray and wipe away excess. Reserve upside down to encourage draining.

Mix together the sugar, glucose and sorbitol in a medium pot and bring to a boil. Mix in the gelatin mixture to combine. Remove from the heat and add the Carolina Reaper paste or powder, citric acid, cherry extract and food coloring. Whisk well to combine. Let the mixture settle for just a couple of minutes; you will see small amounts of white foam coming to the top. Pour through a strainer to remove the foam and any pepper chunks or seeds.

Pour into the prepared molds and chill at least 8 hours and up to 24 hours.

For the coating: Combine the sugar and citric acid in a medium bowl. Remove the gummies from the molds and add to the bowl with the sugar mixture. Toss to create sour gummies! Enjoy!

Cook’s Note
When handling Carolina Reaper peppers, paste or powder, use food prep gloves and an eye cover to avoid skin or eye contact, and wash hands thoroughly after use.

These days, she takes generations of family recipes and makes them her own as she cooks for family and friends at her Sea Island home.

Grandma’s Old-Fashioned Baked Mac ‘N’ Cheese
RECIPE COURTESY OF KARDEA BROWN
Level: Easy
Total: 1 hr 50 min (includes cooling time)
Active: 30 min
Yield: 12 servings

Ingredients

1/2 cup (1 stick) unsalted butter, melted, plus more for the baking dish
1 pound elbow macaroni
1 teaspoon kosher salt, plus more for the pasta water
Two 12-ounce cans evaporated milk
1 3/4 cups heavy cream
6 large eggs
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
Three 8-ounce blocks extra-sharp Cheddar, shredded
One 8-ounce block sharp Cheddar, cut into 1/2-inch cubes
Nonstick cooking spray, for the foil

Directions

Preheat the oven to 350 degrees F. Grease the inside of a 9-by-13-inch baking dish with butter.

Cook the macaroni to al dente according to the package directions in boiling salted water. Drain the pasta and return to the pasta pot or pour into the prepared baking dish. Add the butter and stir until combined.

Whisk together the evaporated milk, heavy cream, eggs, garlic powder, salt and pepper in a large bowl; add to the macaroni. Set aside 1 cup shredded extra-sharp Cheddar for the top. Stir in the remaining shredded cheese and cubed cheese. Sprinkle the reserved shredded cheese evenly over the top.

Cover the dish with aluminum foil (coat the underside with nonstick cooking spray). Bake until the pasta is bubbly, about 40 minutes. Uncover and bake until the cheese is browned, 15 minutes longer. Remove from the oven and let stand 15 minutes before serving.

Cook’s Note: Brown the macaroni under the broiler for 5 minutes if needed.
