White Mac ‘n’ Cheese
Recipe courtesy of Damaris Phillips
Total: 30 min
Active: 25 min
Yield: 6 to 8 servings
Level: Easy

Ingredients

1 pound medium pasta shells
2 tablespoons unrefined coconut oil
2 tablespoons all-purpose flour
2 cups unsweetened almond milk or whole milk
1/2 teaspoon freshly ground white pepper
1/4 teaspoon ground mustard
One 8-ounce block cream cheese, at room temperature
8 ounces sharp white Cheddar, shredded
8 ounces white American cheese, shredded if from a block, otherwise diced
2 tablespoons white wine, optional
Kosher salt

Directions

Bring a large pot of water to a boil and cook the pasta according to the package directions. Set aside.

Melt the coconut oil in a high-sided 10-inch saute pan over medium heat. Stir in the flour and cook until golden brown, about 2 minutes. Slowly whisk in the milk. Reduce to low heat, bring to a simmer and cook until it becomes a thin gravy, about 5 minutes. Add the white pepper and ground mustard and stir to combine. Add the cream cheese and stir until fully incorporated. Stir in the Cheddar, American cheese and wine, if using, and cook until fully incorporated. Taste and add salt as needed.

Add the cooked pasta to the cheese sauce and stir to thoroughly combine. Taste again and salt as needed before serving.

    2 things that struck me:

First, being southern doesn’t automatically make your dish southern… there was nothing southern about that Mac and cheese.

Secondly, she clearly doesn’t know what a tspn is because she said a quarter tspn of mustard and then put a tbspn or more.

Scalloped Potatoes
RECIPE COURTESY OF MOLLY YEH
Level: Easy
Total: 2 hr (includes cooling time)
Active: 35 min
Yield: 4 to 6 servings

Ingredients

2 tablespoons unsalted butter, plus more for greasing
3 tablespoons all-purpose flour
1 1/2 cups whole milk
1/4 teaspoon ground nutmeg
1 teaspoon kosher salt
Freshly ground black pepper
4 ounces Gruyere, shredded
Nonstick cooking spray, for the baking dish, optional
2 pounds Yukon gold potatoes, peeled and sliced 1/8-inch thick
6 ounces thick-cut ham, diced
1/2 cup chopped fresh chives

Directions

Preheat the oven to 350 degrees F.

In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Whisk in about 1/2 cup milk and cook, whisking, until thickened. Add another 1/2 cup milk and cook, whisking, until thickened, about 3 minutes. Add the remaining 1/2 cup milk and cook, whisking, until thickened, another 3 to 4 minutes. Add the nutmeg, 1/2 teaspoon salt, a few turns of black pepper, and half the cheese. Cook gently for a few minutes, making sure all the cheese is melted.

Grease or butter an 8-inch square baking dish. Arrange half of the potatoes all over the bottom. Sprinkle with 1/4 teaspoon salt. Layer in half of the cream mixture, then sprinkle on the ham and half of the chives. Arrange the other half of the potatoes on top, then sprinkle with the remaining 1/4 teaspoon salt, remaining cream, remaining shredded cheese and remaining chives. Cover and bake for 45 minutes, then uncover and bake until browned on top, an additional 20 minutes. Let cool slightly, then serve.
