Kardea Brown shares down-home, Southern recipes from her South Carolina kitchen. The cook and caterer was born and raised on the sea islands of Charleston, the heart of all Southern cooking, and learned to cook in her grandmother’s kitchen. These days, she takes generations of family recipes and makes them her own as she cooks for family and friends at her Sea Island home.

Hushpuppies Two Ways
RECIPE COURTESY OF KARDEA BROWN
Level: Intermediate
Total: 45 min
Active: 45 min
Yield: 3 dozen

Ingredients

Hushpuppies:

Vegetable or canola oil, for frying
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1 tablespoon Miss Brown’s House Seasoning, recipe follows
1/2 teaspoon baking powder
1/2 sweet onion, cut into large chunks
1 large egg
3/4 cup buttermilk
3/4 cup thinly sliced okra
Nonstick cooking spray, for the cookie scoop

Whipped Honey Butter:

1 stick (8 tablespoons) salted butter, at room temperature
1/4 cup honey
Kosher salt

Miss Brown’s House Seasoning:

1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Directions

Special equipment: a cookie scoop; a deep-fry thermometer

For the hushpuppies: Pour enough oil to reach 3 inches up the sides of a Dutch oven. Heat the oil to 375 degrees F.

Combine the cornmeal, flour, House Seasoning and baking powder in a medium bowl. Pulse the onions in a food processor until finely minced. Add to the cornmeal mixture and stir to combine. Add the egg and enough buttermilk to moisten into a batter. Separate half of the batter to another bowl, then stir the okra into one of the batters. (Make sure the batter isn’t too thin. It should hold its shape when scooped out with a spoon.)

Arrange some paper towels in a baking sheet and place a wire rack on top. Working in batches, drop heaping teaspoonfuls of each batter into the hot oil using a cookie scoop coated with nonstick cooking spray, and cook until golden brown, 2 to 2 1/2 minutes depending on the size (see Cook’s Note). Drain the hushpuppies on the wire rack.

Meanwhile, make the whipped honey butter: Beat the butter and honey in a bowl with a hand mixer at medium-high speed until light and fluffy. Season with salt. Serve with the hushpuppies.

Miss Brown’s House Seasoning:
Yield: 5 tablespoons

Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.

Cook’s Note

Cut open the first hushpuppy after frying to make sure they’re done all the way through. The cooking times always vary with hushpuppies because of the size differences.

I like hush puppies with fried fish, and I'm pretty sure it came to be out of economic necessity, so I mix the buttermilk batter (well seasoned) I dip the catfish/whatever we caught that day into with the cormeal (well seasoned) we dipped it into next, add some diced green onion for color and flavor, and fry after the fish is done in the same oil. Fewer wasted ingredients and delicious hush puppies. But yeah, I'm sure this hipster nonsense is edible too. Luckily mom taught me how to cook so I know how much baking powder (the leavening agent) to use since I don't buy self-rising anything. And miss me with that advert for what sounds like the base for a pretty good BBQ rub; any time I do fish I reach for Old Bay, which is in the buttermilk AND the cornmeal for me.
You can always add more milk/cornmeal/seasoning to balance it out if the batter isn't the right texture. Dip'm in tartar sauce, it's easy to make too and don't skimp on the horseradish!
"Okra infused", that's not an infusion, damn. Honey butter… psh

Ma'am, these both look good , We like the non-sweet cornbread/hush puppies in rural Kentucky, we use bacon fat/grease for frying or in iron skillet to make corn bread, usually Martha White's yellow corn meal, not corn flour mix, very nice recipes, God Bless everyone

Brioche-Crusted Salmon 🍞😲

Published

on

A slice of bread guarantees a perfectly buttery, crispy crust on salmon! Adrienne Cheatham shares this technique popularized by chef Laurent Gras.

Get the recipe👇

Brioche-Crusted Salmon
Recipe courtesy of Adrienne Cheatham
Level: Easy
Total: 20 min
Active: 20 min
Yield: 4 servings

This technique of crowning salmon with buttery brioche was borrowed from Laurent Gras, who was a leading chef in Chicago when he popularized it using sourdough. It’s so much fun to play around with. As long as you slice the bread thinly enough, you don’t need to use any binder, since the protein from the fish allows it to stick all by itself. I especially like using salmon, because it tends to release all of that white albumin. It’s the perfect glue for toasty brioche bread, which also keeps it from pooling unappealingly on the plate.

Ingredients

4 skinless salmon fillets (8 ounces each)
1 1/2 teaspoons kosher salt
1 loaf brioche, unsliced
2 tablespoons vegetable oil
4 tablespoons (1/2 stick) unsalted butter
1 garlic clove, crushed
2 or 3 sprigs of thyme

Directions

Preheat the oven to 350 degrees F with a rack in the center position. Season the salmon fillets with the salt and set aside.

Using a serrated knife, trim away the crust from the sides of the brioche loaf, then make 4 long lengthwise slices that are about 1/8 to 1/4 inch thick. Lay a slice of brioche on a cutting board and place a salmon fillet lengthwise in the center; it should fall within the border of the crust. Use your knife to trim away the bread around the salmon. It’s best to hold the knife flat against the edges of the salmon and press straight down (using the same motion as with a cookie cutter) to get an even cutout around the fish. Repeat with the remaining fillets and brioche slices, setting the finished fillets brioche-side down on a plate or tray.

Heat a large oven-safe skillet over medium heat. Put in the oil and butter; when the butter begins to bubble and foam, gently place the salmon, brioche-side down, in the pan. Work in batches if you can’t fit all the fillets in the pan at once. Shake the pan a little to make sure the brioche is not sticking, then scatter the garlic and thyme sprigs around the fish. Cook, swirling the pan occasionally and basting the oil-butter mixture over the fish with a spoon, until the bread is golden brown, about 1 minute.

Flip the fillets brioche-side up, transfer the pan to the center oven rack and bake for 3 to 4 minutes, or until the salmon is cooked through but still has a touch of dark pink inside (about 145 degrees F). Keep in mind, it will continue cooking a little even after you remove it from the oven!

Blot the fish with a paper towel and transfer to plates, brioche-side up. Serve immediately.

Cook’s Note
To make ahead: Complete the recipe through toasting the brioche on the stovetop, then transfer the fish, brioche-side up, to a parchment-lined baking sheet. Keep at room temperature for up to an hour, or refrigerate for up to 4 hours, uncovered. When you’re ready to cook, place the fish in a 375 degrees F oven and cook for 3 to 4 minutes on each side.
