Boston Cream Doughnuts

Yield: 12 donuts

Ingredients

Donuts:
2 1/2 teaspoons active dry yeast
2 tablespoons warm water
1/4 cup sugar, plus a pinch
3 1/2 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons kosher salt
1/2 teaspoon grated nutmeg
1 cup buttermilk, at room temperature
1/4 cup shortening, at room temperature
1 large egg
1 teaspoon pure vanilla extract
Nonstick cooking spray
Vegetable oil, for frying

Chocolate Glaze:
1 1/2 cups bittersweet chocolate chips
6 tablespoons unsalted butter, cut into pieces
1/8 teaspoon kosher salt
2 tablespoons honey
1/2 teaspoon pure vanilla extract

Filling:
2 cups instant vanilla pudding made according to the package directions, placed into a piping bag fitted with a Bismarck tip (see Cook’s Note)

Decorating:
4 tablespoons rainbow sprinkles

Directions

Special equipment: a 3 1/2-inch round cutter, a Bismarck (donut filling) tip, a piping bag
For the donuts: Sprinkle the yeast over the 2 tablespoons warm water in a liquid measuring cup. Add the pinch of sugar and set aside until bubbly, about 5 minutes.

Combine the remaining 1/4 cup sugar with the flour, salt, nutmeg, buttermilk, shortening, egg, vanilla, 150 grams (2/3 cup) water and yeast mixture in the bowl of a stand mixer fitted with the dough hook. Beat on medium-high speed until a smooth ball of dough forms around the hook and only slightly sticks to the bottom of the bowl, 4 to 6 minutes. Transfer the dough to a large bowl lightly sprayed with cooking spray; cover with a kitchen towel or plastic wrap and let rise at room temperature until doubled in size, about 1 1/2 hours.

Line a baking sheet with parchment paper and lightly sprinkle with flour.

On a lightly floured surface, roll the dough out to a 9-by-11-inch rectangle that’s 1/2 to 3/4 inch thick. Use a 3 1/2-inch round cutter to cut out 12 donuts. Transfer the donuts to the prepared baking sheet, cover with a towel, wrap with plastic wrap and let rise until they puff slightly, about 20 minutes.

For the chocolate glaze: In a double boiler over hot, but not boiling, water, combine the chocolate chips, butter and salt. Let mixture gently heat until the chips are melted. Remove from the heat and whisk in the honey and vanilla until smooth. Set aside.

To fry the donuts: Heat 6 inches of oil in a large heavy pot fitted with a candy thermometer over medium-high heat until the oil reaches 350 to 375 degrees. Fry the donuts in batches, flipping halfway through, until golden brown, 1 to 2 minutes per side. Transfer the donuts to a wire rack to cool for 2 minutes.

To fill and decorate the donuts: Once the donuts are able to be handled, but still warm, fill them with the vanilla pudding then dip the tops in the chocolate glaze. Sprinkle with the sprinkles and enjoy!

Cook’s Note
If you do not have a Bismarck tip, you can use a turkey baster instead of a piping bag to fill the donuts with pudding.

Meat Lovers’ Quiche

Level: Easy
Total: 1 hr 30 min (includes cooling time)
Active: 25 min
Yield: 1 (9-inch) quiche; 6 to 8 servings

Ingredients

Half a 14.1-ounce package refrigerated pie crusts
4 slices bacon
1 pound ground country sausage
1/2 cup half-and-half
2 teaspoons Miss Brown’s House Seasoning, recipe follows
6 large eggs, beaten
1/2 cup diced country ham
2 large green onions, chopped
1 cup shredded sharp white Cheddar

Miss Brown’s House Seasoning:

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Directions

Special equipment: a quiche pan, pie weights

Preheat the oven to 375 degrees F. Unroll the pie crust and fit into a 9-inch quiche pan or pie plate. Place a piece of parchment paper over the dough and fill with pie weights or dried beans. Bake until the crust is lightly browned, about 10 minutes. Remove the crust from the oven. Remove the parchment and pie weights and return the crust to the oven. Bake until the crust is baked through, about 5 to 7 minutes longer. Set aside to cool.

Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Remove to paper towels to drain. Chop the bacon. Cook the sausage in the same skillet until browned and crumbly, about 7 minutes. Remove the sausage with a slotted spoon, and set aside with the bacon.

Whisk together the half-and-half, Miss Brown’s House Seasoning (recipe follows) and the eggs. Sprinkle the bacon, sausage, ham, green onions and Cheddar evenly on top of precooked crust. Pour the egg mixture on top. Bake until the center is set, 25 to 30 minutes. (Cover the edges with a pie shield or aluminum foil if getting too brown.) Allow to cool slightly before serving.

Miss Brown’s House Seasoning:
Yield: Makes about 5 teaspoons

Stir together all ingredients in a small bowl. Store in an airtight container.
