Savory Grilled Steak Skewers

Level: Easy
Total: 1 hr 30 min (includes chilling time)
Active: 20 min
Yield: 4 servings

Ingredients

1 1/2 pounds thick-sliced rib eye steak
1 1/2 pounds thick-sliced strip steak
1 teaspoon freshly cracked black pepper
1/3 cup low-sodium soy sauce
2 tablespoons maple syrup
1 teaspoon garlic powder
1 teaspoon onion powder
6 to 7 splashes Worcestershire sauce
Flaky salt, to garnish
2 teaspoons chopped fresh chives

Directions

Special equipment: four 12-inch skewers

Cut the steaks into 1-inch chunks and divide them evenly among four 12-inch skewers (see Cook’s Note).

Place the skewers into a baking dish and sprinkle with the black pepper. Set aside.
In a small bowl, mix the soy sauce, maple syrup, garlic powder, onion powder and Worcestershire sauce. Pour the mixture over the steak skewers, making sure to coat them completely. Cover tightly, pressing the plastic against the skewers. Place in the fridge for at least 1 hour or up to 24 hours to marinate.

When ready to cook, preheat the grill to medium-high.

Grill the skewers, turning to evenly char, 8 to 10 minutes for medium-rare. Remove the skewers from the grill and let them rest for 5 to 7 minutes before serving. Serve the skewers garnished with the flaky salt and chives.

Cook’s Note
If using wooden skewers, soak the skewers in water for 30 minutes before proceeding.

Blueberry Hand Pies

Level: Easy
Total: 1 hr 10 min (includes cooling time)
Active: 30 min
Yield: 12 servings

Ingredients
Filling:
3 cups blueberries
1/2 cup granulated sugar
3 tablespoons cornstarch
2 teaspoons lemon zest plus juice of 1/2 lemon
1 teaspoon vanilla extract

Pastry:
3 sheets frozen puff pastry (from two 17.3-ounce packages, such as Pepperidge Farm), thawed
1 large egg beaten with 2 tablespoons water

Glaze:
2 cups powdered sugar
1/2 teaspoon vanilla extract

Directions

For the filling: Combine the blueberries and granulated sugar in a medium saucepan over medium heat. Bring to a boil, reduce the heat and cook, stirring, until the sugar is melted and the berries have started to burst, a few minutes. Stir together the cornstarch and lemon juice in a small bowl until combined, then add to the blueberry mixture. Add the lemon zest and vanilla and continue to cook until glossy and thickened, 2 to 3 minutes. Remove from the heat and let cool completely. Cover and refrigerate until ready to use.

For the pastry: Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment.

To make the pies, unfold the thawed pastry and roll out to 10-inch squares if necessary. Cut each square in quarters, making four 5-inch squares from each. Spoon 1 1/2 tablespoons of cooled filling onto one corner of each square. Brush around the squares with the egg wash. Fold the pasty over the filling on each to make a triangle, pressing lightly to remove any air pockets. Crimp the edges shut with a fork. Put the pies on the prepared baking sheets. Brush the tops of the pies with the egg wash. Bake until golden brown, about 20 minutes. Transfer to a cooling rack set over a baking sheet.

For the glaze: Mix the powdered sugar, vanilla and 1/3 cup cold water in a bowl until smooth. Drizzle the glaze over the pies and let set until dry.

Meat Lovers’ Quiche

Total: 1 hr 30 min (includes cooling time)

Yield: 1 (9-inch) quiche; 6 to 8 servings

Ingredients

Half a 14.1-ounce package refrigerated pie crusts
4 slices bacon
1 pound ground country sausage
1/2 cup half-and-half
2 teaspoons Miss Brown’s House Seasoning, recipe follows
6 large eggs, beaten
1/2 cup diced country ham
2 large green onions, chopped
1 cup shredded sharp white Cheddar

Miss Brown’s House Seasoning:

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Directions

Special equipment: a quiche pan, pie weights

Preheat the oven to 375 degrees F. Unroll the pie crust and fit into a 9-inch quiche pan or pie plate. Place a piece of parchment paper over the dough and fill with pie weights or dried beans. Bake until the crust is lightly browned, about 10 minutes. Remove the crust from the oven. Remove the parchment and pie weights and return the crust to the oven. Bake until the crust is baked through, about 5 to 7 minutes longer. Set aside to cool.

Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Remove to paper towels to drain. Chop the bacon. Cook the sausage in the same skillet until browned and crumbly, about 7 minutes. Remove the sausage with a slotted spoon, and set aside with the bacon.

Whisk together the half-and-half, Miss Brown’s House Seasoning (recipe follows) and the eggs. Sprinkle the bacon, sausage, ham, green onions and Cheddar evenly on top of precooked crust. Pour the egg mixture on top. Bake until the center is set, 25 to 30 minutes. (Cover the edges with a pie shield or aluminum foil if getting too brown.) Allow to cool slightly before serving.

Miss Brown’s House Seasoning:
Yield: Makes about 5 teaspoons

Stir together all ingredients in a small bowl. Store in an airtight container.
