How to Cook Like an Italian: Part 8 🇮🇹
Crespelle alla Fiorentina is Italian comfort food at its finest ❤️ The cozy Italian dish is a delicate alternative to classic manicotti, with soft, lacy crepes standing in for pasta. Yet this technique is far from unusual in parts of Italy. In Tuscany — particularly in Florence — crespelle have long been treated much like fresh pasta. These delicate Italian crepes are filled with creamy ricotta and spinach, then topped with béchamel and tomato sauce. It’s elegant enough for a dinner party and comforting enough for a cozy family dinner. Gabe completes the meal with his Cacio e Pepe Beans, which turn the butter beans in your pantry into a creamy, decadent side dish.

Pasta, Pesto and Peas

Ingredients

3/4 pound fusilli pasta
3/4 pound bow tie pasta
1/4 cup good olive oil
1 1/2 cups pesto (packaged or see recipe below)
1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry
3 tablespoons freshly squeezed lemon juice
1 1/4 cups good mayonnaise
1/2 cup freshly grated Parmesan
1 1/2 cups frozen peas, defrosted
1/3 cup pignoli (pine nuts)
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper

Pesto:
1/4 cup walnuts
1/4 cup pignoli (pine nuts)
3 tablespoons chopped garlic (9 cloves)
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups good olive oil
1 cup freshly grated Parmesan

Directions

Cook the fusilli and bow ties separately in a large pot of boiling salted water for 10 to 12 minutes until each pasta is al dente. Drain and toss into a bowl with the olive oil. Cool to room temperature.
In the bowl of a food processor fitted with a steel blade, puree the pesto, spinach, and lemon juice. Add the mayonnaise and puree. Add the pesto mixture to the cooled pasta and then add the Parmesan, peas, pignoli, salt, and pepper. Mix well, season to taste, and serve at room temperature.

Pesto:
Yield: 4 cups

Place the walnuts, pignoli, and garlic in the bowl of a food processor fitted with a steel blade. Process for 15 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan and puree for a minute. Use right away or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.

Notes: Air is the enemy of pesto. For freezing, pack it in containers with a film of oil or plastic wrap directly on top with the air pressed out.

To clean basil, remove the leaves, swirl them in a bowl of water, and then spin them very dry in a salad spinner. Store them in a closed plastic bag with a slightly damp paper towel. As long as the leaves are dry they will stay green for several days.

Ketchup Tartar Sauce:
1/2 cup mayonnaise
1/4 cup ketchup
1/4 cup finely diced dill pickle
1 tablespoon chopped fresh dill
1 tablespoon lemon juice
1 tablespoon onion powder
1 tablespoon chopped fresh parsley
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper

Fish:
Neutral oil, for frying
2 large eggs
1/4 cup cornstarch
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
1 teaspoons paprika
3 cups panko breadcrumbs
1 pound Atlantic cod, cut into 4 pieces, 1/2 inch thick and trimmed to fit bun of choice
Flaky salt
4 slices American cheese

Assembly:
4 challah rolls, toasted with butter
4 cups shredded iceberg lettuce
Dill pickle chips
Lemon wedges

Directions

Special equipment: a deep-fry thermometer

For the ketchup tartar sauce: In a small mixing bowl, whisk together the mayonnaise, ketchup, dill pickle, fresh dill, lemon juice, onion powder, parsley, Worcestershire sauce and salt and pepper to taste. Set aside, either at room temperature or in the refrigerator, until ready to use.

For the fish: In a shallow pan with high sides, heat 1 inch of neutral oil over medium heat until an oil thermometer reaches 325 degrees F.

In a shallow bowl or baking pan, whisk together the eggs, cornstarch, garlic powder, onion powder, kosher salt and paprika. In a separate shallow bowl or baking pan, add the panko. Place the fish in the egg mixture and fully coat, allowing any excess to drip off. Then add the coated fish to the panko, firmly pressing down so that each piece is fully coated in breadcrumbs.

To fry: Carefully add each piece of breaded fish into the hot oil, making sure to not overcrowd the pan. Fry for 1 to 2 minutes on each side until golden brown. Remove to a cooling rack set over a baking sheet to drain of excess oil. Season with flaky salt and top with a slice of American cheese, to melt.

To assemble: Slather ketchup tartar on both sides of the challah rolls. Add shredded lettuce to the bottom half. Top with a piece of cheesy fried fish and dill pickles. Finish with the top bun. Serve with lemon wedges on the side. Enjoy immediately.
