Scott Conant’s Thin & Crispy Breadsticks

Grissini with Herbs and Parmigiano-Reggiano

Yield: about 150 breadsticks
We used to have these at the bar of a restaurant I worked at years ago. People loved that they were delicious, delicate and addictive!
Ingredients
5 grams fresh yeast
1 large egg
2 teaspoons extra-virgin olive oil, plus more to coat
2 teaspoons whole milk
1 teaspoon molasses
1 3/4 cups plus 4 teaspoons bread flour
1/3 cup finely grated Parmigiano-Reggiano, plus more finely grated for sprinkling
2 teaspoons finely chopped fresh chives
1 1/2 teaspoons kosher salt
1 teaspoon finely chopped fresh parsley
1 teaspoon finely chopped fresh thyme
1/2 teaspoon finely chopped fresh rosemary
1/8 teaspoon sweet paprika
Semolina flour, for dusting
Directions
Special equipment: a kitchen scale; a pasta-rolling machine
In the bowl of a stand mixer, mix the yeast with 1/3 cup plus 4 teaspoons warm water and let sit until bubbly, about 5 minutes. Whisk the egg in a small bowl. Set aside 20 grams of the whisked egg in a separate small bowl to add to the dough; reserve the remaining whisked egg for the egg wash.
Attach the dough hook to the mixer, add the olive oil, milk, molasses and reserved 20 grams of whisked egg to the bowl and mix well to combine. Add half of the bread flour and mix for 8 minutes, making sure there are no lumps. Add the rest of the bread flour, the Parmigiano-Reggiano, chives, salt, parsley, thyme, rosemary and paprika and mix/knead for 7 to 8 minutes, then remove the dough from the bowl and knead for an additional 2 to 3 minutes by hand. Refrigerate the dough in the bowl until doubled in size, about 1 hour.
Heat a convection oven to 300 degrees F or a regular oven to 325 degrees F.
Flip 2 baking sheets or half sheet pans upside down and coat lightly with olive oil. Sprinkle semolina on your work surface.
Remove the dough from the bowl and fold it over to get rid of any large air pockets. Divide the dough in half and working with one half at a time and using a pasta-rolling machine, roll the dough from thickest to thinnest setting until the dough is 1/16 inch thick. (The last or second to last setting on the machine.) Cut the rolled-out sheets in half. By hand or using the linguine or spaghetti attachment, cut the dough sheets into thin strands (1/8- to 1/16-inch, depending on what cutter you use) and dust them with the semolina flour to keep them separate. Repeat with the remaining dough. Transfer the strands lengthwise to the upside-down baking sheets, leaving about 1/2 inch between each. Stretch the strands so they are the length of the baking sheet (trimming off any excess). With a small pastry brush, brush the strands with the reserved egg wash, then sprinkle lightly with additional Parmigiano-Reggiano.
Bake until golden brown, 12 to 15 minutes. If the breadsticks stick to the pans at all, you may need a fish spatula to help release them. Let cool completely, then store in an airtight container. They will last for a week.

Yes it is delicious, but Sanders said he was giving a good meal at a fair price, the meal is still there but the fair price not so much.
Many recipes out there, would not taste like Kentucky but still delicious, for the taste is as much because of the method as the ingredients

I have tasted no other fried chicken taste better than Kentucky Fried Chicken. The Thigh is my favorite. Breast is too dry, Drumstick is too little meat and the Wing is practically nothing but bone. Only if KFC have Chicken Leg Quarter. That would be my favorite instead of the Chicken Thigh. Fried foods is 1 of 10 most fattening foods. Especially when it have flour/batter. Because of the deep fry with oil and flour/batter.
Do not eat your Fried Chicken right away. Place 2 Sparkle Pick-a-Size Paper Towels folded in half under the Chicken. See how much oil the Paper Towels soaked up the oil. You'll be surprise and glad not consuming all that oil when you see how much oil is in the Paper Towels. Get 2 more Paper Towels ready to wipe your mouth and hands. When finished with one Paper Towels you have another one ready to use. Get another Paper Towels so you have that one to use when finshed with the one you have. Do not lick your finger but wipe your hand. You're licking all the oil and grease came out of the chicken.
To make your own Fried Chicken. KFC basic ingredients: type of flour?, dry milk powdered brand? egg and salt and that's it. That's all you-know.
Use USDA Organic cleaner ingredients when possible. The food quality is worth the extra dollars. Try experimenting your own 11 Herb and Spices, or more if you want. You never know your Fried Chicken could be a hit of the restaurant quality. One thing I found out from this video is the Pressure Fryer. It keeps the Chicken moist and all the flavour the inside. Colonel Sanders chose the number 7 and not 4 or 10 because that is just right for him. Not too little mixture and not over doing the flour mixture either.

We grew up on KFC, it doesn't taste the same at all. People who purchase a franchise but can't afford the secret ingredients ain't making the real fried KFC chicken, and that's any famous chicken restaurant. When a certain man holds the so-called real recipe you don't pay, You don't play. He brought the recipe from an old African American woman. How was she able to afford 11herbs and spices. Huh.

I worked at a kfc in the 60s we used a bunch of pressure cookers and there is one thing missing that they do not do now , the merinade is missing it was a buttermilk solution that was added to a drum and the chicken was rolled in there for about 15minutes and then drained and the egg solution and the breading and the deep fried by dropping the chicken into the pot in a spefic order to get a perfect cook on the larger pieces.

KFC was my first job in 2002 and I just breaded and cooked all the chicken and the chicken strips too and cleaned I was the youngest their so I had to do the dirty work lol

Colonel Sanders died over 40 years ago, and when he was alive, he was quite critical of how KFC had changed his recipe for the sake of cutting costs. With high prices these days, I bet they have cut quite a bit more out of that chicken recipe in four decades.
