Mocha Chocolate Icebox Cake

Yield: 8 servings

Ingredients

2 cups cold heavy cream
12 ounces Italian mascarpone cheese
1/2 cup sugar
1/4 cup coffee liqueur, such as Kahlua
2 tablespoons unsweetened cocoa powder, such as Pernigotti
1 teaspoon instant espresso powder
1 teaspoon pure vanilla extract
3 (8-ounce) packages chocolate chip cookies, such as Tate’s Bake Shop
Shaved semisweet chocolate, for garnish

Directions

In the bowl of an electric mixer fitted with the whisk attachment, combine the heavy cream, mascarpone, sugar, coffee liqueur, cocoa powder, espresso powder, and vanilla. Mix on low speed to combine and then slowly raise the speed, until it forms firm peaks.

To assemble the cake, arrange chocolate chip cookies flat in an 8-inch springform pan, covering the bottom as much as possible. (I break some cookies to fill in the spaces.) Spread a fifth of the mocha whipped cream evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by another fifth of the cream. Continue layering cookies and cream until there are 5 layers of each, ending with a layer of cream. Smooth the top, cover with plastic wrap, and refrigerate overnight.

Run a small sharp knife around the outside of the cake and remove the sides of the pan. Sprinkle the top with the chocolate, cut in wedges, and serve cold.

    I always get the feeling that when the cameras are not around Ina a is the kind of cook who licks the bowl and the knife and keeps on cooking without washing her hands. Then she licks her little sausage fingers and sticks them back in the whipped cream. I get the feeling that anyone who eats something she has cooked ends up with a tablespoon or two of her saliva in their food.

    I always whip the cream separately, then the mascarpone and add the wipped cream. I never new it would turn into a cream with all the ingredients in one bowl. I shall have to try this recipe ;- )

    What a great idea for a cake!! Thank you so much for sharing!
    I just made it yesterday for today's family dinner, – everyone was delighted!
    I added more cocoa and coffee than in the recipe, and less sugar, because the cookies are sweet. And walnuts! Guys, try and add walnuts, because that adds so much to both taste and texture!
    I let the cake sit in the fridge for 24 hours before serving, but the cookies did not soak through and were hard to cut through, and some cake pieces fell apart because of it.
    I am thinking: what should I try differently next time: soak them in coffee? Or break down into pieces? Or use different cookies?
    (I used Nabisco Chips Ahoy Chocolate cookies)

    Mascarpone is the best addition to heavy whip. I’m confused as to not using powdered sugar, but that’s just me. Great recipe. Thanks Ina! Any dessert you can make the day before guests, is the best plan. Cheers!

    Does anyone know why they took all these cooking shows (i.e. Ina Garten, Giada, etc.) off the food network?

    The only cooking show on now is Pioneer Woman… The rest of time food network is bombarded with Guy Fieri. 🙄

    It looks delicious Ina. But I suggest leaving just enough mocha cream to dress the sides of the cake after you pull it out of the fridge. The more formal or complete look wanted for some occasions could easily be accomplished this way. BTW Tate's cookies are the absolute best! And the industry obviously took notice given all the new thin, crunchy options that were offered by the big brands after her's took the market by storm. You rich chicks must have a Mason-like secret society where you have meetings, drink Bellinis, share recipes and plot market takeovers.
