Cavatelli with Asparagus, Lemon and Fresh Ricotta
RECIPE COURTESY OF JEFF MAURO
Level: Intermediate
Total: 40 min (includes draining time)
Active: 25 min
Yield: 4 servings

Ingredients

One 1-pound bunch asparagus, tough ends trimmed and reserved, spears sliced on a bias into 2-inch pieces
Kosher salt and freshly cracked black pepper
1 cup (8 ounces) fresh full-fat ricotta, drained (see Cook’s Note)
2 tablespoons freshly grated Parmesan, plus more for serving
2 tablespoons lemon juice plus zest of 1/2 lemon (plus more zest for garnish)
1 pound fresh or frozen cavatelli
3 tablespoons olive oil
3 cloves garlic
Grated Pecorino-Romano, for garnish
Fresh basil, for garnish

Directions

Place the woody stems from the asparagus in a food processor. Process until smooth. Transfer the pureed asparagus to a fine-mesh strainer set over a small bowl. Let the juices drain, 5 to 10 minutes, pressing down lightly on the puree with a wooden spoon occasionally. Reserve the juice and discard the pulp.

Bring a large pot of generously salted water to a boil.

Meanwhile, in a large bowl, whisk the ricotta, Parmesan and 1 tablespoon lemon juice with some salt and pepper. Add the lemon zest and set aside.

Once the water has boiled, add the cavatelli and cook according to the package instructions until al dente.

Meanwhile, add the olive oil to a large skillet over medium heat. Add the garlic and cook until lightly golden, about 2 minutes. Remove the garlic, then add the sliced asparagus and saute until tender, 3 to 5 minutes. Drain the cavatelli directly into the skillet with the asparagus. Add about half of the asparagus juice and allow to simmer for 1 minute. Add the remaining asparagus juice and the remaining tablespoon lemon juice and cook until the pasta is glossy, about 1 minute. Transfer to a bowl and garnish with Pecorino-Romano, lemon zest, dollops of the whipped ricotta, basil and black pepper.

Cook’s Note
Fresh ricotta has a much more delicate flavor than most kinds with additives found in plastic tubs. You can find fresh ricotta in Italian markets or sometimes in supermarkets, mounded up high and packaged in small tin pails. It is often labeled as hand-dipped, hand-packed or hand-ladled. If you can’t find fresh ricotta in the tins, Calabro is a good brand found in plastic tubs. If the ricotta is wet, drain in a damp cheesecloth-lined strainer set over a bowl in the refrigerator for a couple of hours.

It's very interesting how he used the asparagus juice kind of as a replacement for tomatoes and the cheese for meat in this dish. From the recipe it looks very interesting, a different approach than the tomato path taken by a lot of pasta.

I'd love to try this recipe and I have a question. If you don't own a juicer, what would be the best method to "juice" the asparagus stalks for the sauce? Delicious looking dish, Jeff!

Parker’s Split Pea Soup
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 1 hr 40 min
Prep: 10 min
Cook: 1 hr 30 min
Yield: 5 to 6 servings

Ingredients

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water

Directions

In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

Mini Tiramisu
RECIPE COURTESY OF REE DRUMMOND
Level: Easy
Total: 20 min
Active: 20 min
Yield: 2 servings

Ingredients

1/2 cup heavy cream
2 tablespoons sugar
1 teaspoon vanilla extract
1/2 cup mascarpone cheese, at room temperature
1/4 cup espresso or very strong coffee
2 teaspoons dark rum or marsala
6 savoiardi biscuits or ladyfingers
One 1-ounce piece semisweet chocolate
Unsweetened cocoa powder, for dusting

Directions

Combine the cream, sugar and vanilla in a bowl and beat until stiff peaks form. Beat in the mascarpone.

Combine the espresso and rum in a shallow bowl.

Break the ladyfingers into thirds to make 18 pieces. To build the first tiramisu, quickly dip 2 pieces in the coffee mixture, then place in the bottom of a small glass.

Spoon a heaping tablespoon of the mascarpone mixture on top. With a rasp or the smallest holes on a box grater, grate a fine layer of the chocolate over the mascarpone mixture. Repeat 2 more times to fill the glass, then repeat the whole process for the second tiramisu.

Using a fine sieve, dust the tops with cocoa powder. Refrigerate for at least 2 hours or up to 2 days.

Deviled Egg Jello Shots?! 👀🥚

Published

on

Andrew Fuller stopped by Food Network Kitchen with the ultimate Halloween trick to totally dupe your friends!

Catch Andrew judging the FINALE of #HalloweenWars, Sunday at 9|8c!

Get the recipe 👇

Deviled Egg Jell-O Shots
Recipe courtesy of Andrew Fuller
Level: Easy
Total: 1 hr (includes setting time)
Active: 15 min
Yield: about 12 shots, depending on the size of your mold

These boozy little impostors look alarmingly like real deviled eggs—but they’re creamy, sweet Jell-O shots.

Ingredients

“Egg Whites”:
1/2 cup whipped cream-flavored vodka
2 teaspoons agar-agar powder
1/2 cup horchata liqueur, such as Licor 43 Horchata
1/2 cup heavy cream

“Yolk” Filling:
1 cup whole milk
One 3.4-ounce box banana cream instant pudding mix, such as Jell-O
One 8-ounce container frozen whipped topping, such as Cool Whip, completely thawed
Yellow food coloring, as needed
Ground cinnamon, for the “paprika” garnish

Directions

Special equipment: silicone half-egg molds

For the “egg whites:” Place the silicone egg molds on a flat tray.

With the burner off, pour the vodka into a small saucepan, evenly sprinkle the agar-agar over it and whisk to combine. Place the pan over very low heat and cook, whisking constantly, until the mixture begins gently bubbling and thickening, without reaching a rolling boil, about 3 minutes. Whisk in the horchata liqueur and heavy cream.
Continue to cook over low heat, stirring, just until completely smooth and well combined, about 2 minutes more.

Immediately pour the mixture into the egg molds. Use a toothpick to pop any bubbles on the surface. Refrigerate until completely firm, 30 to 60 minutes.

Carefully remove the “egg whites” from the molds. Use a small melon baller or spoon to scoop a shallow cavity from the center of each one. Save the scooped-out pieces for a boozy chef’s snack!

For the “yolk” filling: Whisk together the milk and instant pudding mix until thick and smooth.

Fold in the thawed whipped topping. Add enough yellow food coloring to create a convincing yolk color. Pipe or spoon the filling into the centers of the molded shots. Lightly dust with cinnamon to mimic paprika. Keep refrigerated until serving.

Cook’s Note
These look extremely convincing, so make it clear to guests that they contain alcohol. Never serve them as a surprise and keep them away from children. If doing these without alcohol, replace the alcohol with actual horchata.
