Sausage and Herb Stuffing

Yield: 8 to 10 servings
Ingredients
16 cups 1-inch bread cubes, white or sourdough (1 1/2 pound loaf)
8 tablespoons (1 stick) unsalted butter
2 cups medium-diced yellow onion (2 onions)
1 cup medium-diced celery (2 stalks)
2 Granny Smith apples, unpeeled, cored and large-diced
2 tablespoons chopped flat-leaf parsley
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
3/4 pound sweet or spicy Italian sausage, casings removed
1 cup chicken stock
1 cup dried cranberries
Directions
Preheat the oven to 300 degrees F.
Place the bread cubes in a single layer on a sheet pan and bake for 7 minutes. Raise the oven temperature to 350 degrees F. Remove the bread cubes to a very large bowl.
Meanwhile, in a large saute pan, melt the butter and add the onions, celery, apples, parsley, salt and pepper. Saute over medium heat for 10 minutes, until the vegetables are softened. Add to the bread cubes.
In the same saute pan, cook the sausage over medium heat for about 10 minutes, until browned and cooked through, breaking up the sausage with a fork while cooking. Add to the bread cubes and vegetables.
Add the chicken stock and cranberries to the mixture, mix well, and pour into a 9 by 12-inch baking dish. Bake for 30 minutes, until browned on top and hot in the middle. Serve warm.

Fattet Battenjen
RECIPE COURTESY OF TARIK FALLOUS

Yield: 6 servings
Ingredients
Fried Eggplant:
2 pounds eggplant (about 4 medium)
1 tablespoon sea salt
2 cups vegetable oil
Tahini Yogurt Garlic Sauce:
4 cups whole yogurt
2 tablespoons tahini
1 lemon, juiced
3 cloves garlic, crushed into a paste
1 teaspoon pomegranate molasses
1 teaspoon sea salt
The Layers:
2 pita loafs, cut in about 1-inch equal squares and toasted
2 cups chickpeas with liquid from the can
1 teaspoon sea salt
1 teaspoon ground cumin, plus a pinch
1/2 cup fresh parsley, chopped
1 teaspoon paprika
2 tablespoons pomegranate seeds
2 tablespoons sundried cranberries
1 tablespoon unsalted butter, melted
2 tablespoons pine nuts, toasted
3 to 4 mint leaves, for garnish (optional)
Directions
For the eggplant: Remove the tops from the eggplants and slice them the long way into 1-inch slices. Rub the sea salt on the flesh sides of each eggplant and place them into a strainer on top of a large bowl. Let them sit for an hour in a cool place.
Cut the eggplant into 1-inch cubes, all about the same size so that they will cook evenly.
Heat the oil in a high-sided skillet over medium-high heat to 350 degrees F on a deep-fry thermometer. Line a plate with paper towels.
Carefully drop one piece of eggplant into the oil, and when it starts to sizzle, add a few more handfuls. Working in batches, fry the eggplant until they are golden and crispy, stirring occasionally, 4 to 5 minutes. Transfer the fried eggplant to the paper-towel-lined plate.
For the tahini yogurt garlic sauce: Whisk the yogurt in a large bowl until smooth. Add the tahini, lemon juice, garlic, pomegranate molasses and sea salt and whisk until combined and smooth.
For the layers: Lay the toasted pita chips on a platter, top with the chickpeas and sprinkle with the salt and cumin. Top with the fried eggplant, then pour over the yogurt sauce and top with the parsley. Sprinkle over the paprika, pomegranate seeds and cranberries. Top with the melted butter and toasted pine nuts. Garnish with mint leaves if using and serve.

Ingredients
One 4- to 5-pound first cut (flat cut) brisket, trimmed
Kosher salt and freshly ground black pepper
1 tablespoon paprika
3 tablespoons extra-virgin olive oil
1 1/4 pounds carrots (6 to 7 large), peeled and cut into 1 1/2-inch pieces
4 large onions, thickly sliced
1 tablespoon chopped fresh thyme
4 cloves garlic, chopped
1/4 cup tomato paste
1/2 cup dry red wine
1 quart (4 cups) low-sodium beef broth
2 tablespoons light brown sugar
2 tablespoons apple cider vinegar
3 fresh bay leaves
1 cup dried apricots
1 cup pitted prunes
Directions
Position a rack in the lower third of the oven, remove any other racks and preheat the oven to 350 degrees F.
To a small bowl add 2 teaspoons salt, 1/2 teaspoon pepper and paprika. Mix to combine. Season the brisket with spice mixture and rub it into the surface of the meat. Heat a large Dutch oven (preferably oval) or other heavy-bottomed pot over medium heat and add the oil.
When hot, add the brisket, fat side down, and cook until browned on the underside, 2 to 3 minutes. Turn over and brown the other side, about 2 minutes more. Remove to a baking sheet.
Add the carrots and onions to the pot and stir to coat in the oil. Cook, stirring occasionally, until the onions are wilted and lightly browned, 4 to 5 minutes. Stir in the thyme and garlic. Clear a spot in the bottom of the pot and add the tomato paste to it. Cook, stirring in that spot, until the paste darkens a shade or two, about 1 minute, then it stir into the vegetables. Add the red wine, bring to a simmer and cook until almost reduced, 1 to 2 minutes. Add the broth, brown sugar, vinegar and bay leaves and bring to a simmer. Add the brisket back to the pot fat-side up.
Cover and bake until the brisket is just tender, 2 hours 30 minutes to 2 hours 45 minutes.
Stir in the apricots and prunes, cover and continue to bake until the brisket is very tender all over (a paring knife inserted in several places will slip out easily), 20 to 30 minutes more. If you have time, let the brisket cool to room temperature in the sauce and refrigerate overnight.
To serve, remove any fat that has solidified on the surface and remove the brisket to a cutting board. Bring the sauce to a simmer over medium-low heat, then adjust the consistency by reducing it if too thin or adding a little water if too thick.
Meanwhile, thinly sliced the brisket against the grain. Season the slices lightly with salt and add back to the sauce. Simmer to warm it through thoroughly, 5 to 7 minutes. Remove the bay leaves. Serve the brisket on a rimmed platter with the sauce, vegetables and dried fruit.
You can also serve the brisket right away: Remove the brisket to a cutting board and let rest for 15 minutes. Skim any fat that has risen to the surface of the sauce and remove the bay leaves. Bring the sauce to a simmer over medium heat and reduce to your liking. Slice the brisket, season lightly with salt and serve on a platter with the sauce, vegetables and dried fruit.

I emailed this woman years ago and asked why she didn’t have more diversity in her friends and she emailed me back and basically said she only featured people she knew and that didn’t include people unlike herself. I’ve never watched her shows since and would never try any of her recipes.💩

I always put the neck etc in with the stuffing cooking separately from the turkey so that the stuffing has the turkey flavoring.

I always add apples and cranberries to my stuffing. No complaints from anyone! Also I cook the turkey and stuffing separately, like Ina.

This is a no for me. You can’t have stuffing that isn’t seasoned with the spices everyone wants at this time of year … sage, rosemary and thyme. Salt and pepper are not enough. Those cubes of bread and chunks of vegetables/fruit are too big. You need smaller pieces so that every bite is balanced with a little bit of everything. Always butter the baking dish for more flavor, so it won’t stick, and the edges will crust and brown nicer. Add one egg to help bind and to add more fat/flavor. Always drain sausage to remove the majority of the grease. One cup
of liquid will not be enough. Bake first half covered to retain moisture, and second half uncovered to slighty brown.

Ina Garten does dressing right: with apples, not too much liquid, and no eggs for God's sake. It's not supposed to be custard. I also like that she bakes it uncovered so it isn't soggy. Only thing I'd add is a bit more chicken stock.

Ina doesn't like strong herbs or spices (cilantro, sage, chili flake, cayenne). This recipe is screaming for sage, thyme, and some cayenne. I'd also recommend more broth and let the breads cubes (not crumbs) soak it in before baking.

I know I'm going to be smacked into next week for this but I use cornbread AND bread and we still stuff our turkey. I have done it for 40 years like my grandmother taught me. The kids wouldn't have it any other way. 🦃

I think I'll try this with a sage and onion stuffing mix (for the smaller bread cubes) maybe 2 cups of stock? peeled Grannysmith, pre-soaked craisins, and maybe add some toasted pecans too.
