Whiskey-Glazed Chicken & Shrimp with Garlic Mashed Potatoes Recipe
1 head of garlic cut in half drizzled with olive oil, pinch of salt & pepper, wrap in foil, bake 350 degrees, 45 minutes.
Make sauce: Mash to a paste 1/2 of the garlic in a bowl, add
1 cup pineapple juice
2/3 cup water
1 tbsp soy sauce
1/4 cup teriyaki sauce
1 1/4 cups brown sugar
Mix until dissolved, pour into cast iron skillet, add
1 tsp Lemon zest
3 tbsp lemon juice
1/4 cup minced white onion
2 tbsp crushed pineapple
2 tbsp whiskey (maybe more?)
1/2 tsp cayenne
Simmer 20-30 minutes until syrupy
6-8 medium red skin potatoes, quartered
Cover with cold water and boil until tender
Drain and return to pot, add other half of the roasted garlic and mash, add
3 tbsp butter
1 cup heavy cream
1 tsp salt
1 tsp pepper
Mash again until smooth
4 pounded flat chicken breasts
10 shrimp
Bread with 3 beaten eggs and panko, shallow fry in olive oil until crispy and cooked through.
To serve, coat chicken and shrimp in sauce, plate with mashed potatoes
