Coconut Shrimp Salad
RECIPE COURTESY OF JEFF MAURO
Level: Easy
Total: 35 min
Active: 20 min
Yield: 4 to 6 servings

Ingredients

Salad:
1/2 cup creamy peanut butter
3 tablespoons warm water
2 tablespoons honey
2 tablespoons lime juice
2 tablespoons soy sauce
1 tablespoon unseasoned rice vinegar
1 tablespoon grated ginger
Kosher salt and freshly ground black pepper
1 head Napa cabbage, thinly sliced
1 cup shredded red cabbage
1 cup shredded carrots
1 cup frozen shelled edamame, thawed
1 cup loosely packed cilantro leaves
4 scallions, white and green parts, thinly sliced on the bias
2 red Thai chiles, very thinly sliced

Shrimp:
Canola oil, for frying
1/3 cup all-purpose flour
2 large eggs, lightly beaten with 1 tablespoon cold water
1 cup panko breadcrumbs
1 cup unsweetened shredded coconut
Kosher salt and freshly ground black pepper
1 pound large shrimp (26/30), peeled and deveined, tails-on
Lime wedges, for serving

Directions

For the salad: Whisk together the peanut butter, water, honey, lime juice, soy sauce, rice vinegar, and ginger in a large bowl. Season with salt and pepper. Add the Napa cabbage, red cabbage, carrots, edamame, cilantro, scallions and chiles. Toss to ensure everything is well coated in the dressing.

For the shrimp: Add 2 to 3 inches of oil to a large Dutch oven and heat over medium heat until a deep-frying thermometer registers 375 degrees F.

Add the flour to a shallow bowl or baking dish. Add the egg mixture to a second shallow bowl or baking dish. Add the breadcrumbs with the shredded coconut to a third shallow bowl or baking dish and mix to combine. Season each baking dish with salt and pepper.

Working in batches, dredge the shrimp in the flour, shaking off any excess. Then dip in the egg mixture, then into the breadcrumb mixture, pressing and turning to ensure they are thoroughly coated. Transfer to a plate and repeat until all the shrimp are breaded.

Fry in batches until golden and crispy, 2 to 3 minutes. Transfer the shrimp to a paper-towel-lined plate and season with salt.

Top the Napa salad with the shrimp and serve with lime wedges.

Building the ULTIMATE Korean Burger (Ft. Kimchi Bacon Jam) with Esther Choi 🍔 | K 버거 끝판왕

Published

on

Taking inspiration from classic Korean pub food, @choibites recreates the legendary Korean Burger that’s been the biggest hit at her NYC restaurant, Ms. Yoo. This isn’t just a fan favorite — it’s a national award‑winning burger that’s held its spot on the menu for years 🌟 What makes it unforgettable? Esther calls for high-quality 80/20 beef, and it features two powerhouse condiments: kimchi bacon jam (sweet, spicy, tangy, and deeply savory) and a spicy gochujang mayo (creamy heat with bold Korean flavor) 🤤 Esther puts her own twist on the dish by pairing it with a simple but bold side: broccoli with crumbled tofu, adding freshness and texture to balance the richness of the burger 🥦

BEC Tteokbokki
Recipe courtesy of Esther Choi
Level: Easy
Total: 30 min
Active: 30 min
Yield: 4 to 6 servings

Ingredients

1 pound cylindrical Korean rice cakes
1/2 pound thick-cut bacon, cut into 1/2-inch slices
4 cloves garlic, minced
2 dashi stock coins
2 tablespoons fine gochugaru
1/4 cup gochujang
3 tablespoons sugar
2 tablespoons soy sauce
2 tablespoons fish sauce
2 tablespoons mirin
4 ounces fish cakes, sliced into triangles (about 6 pieces per sheet)
1/2 small head green cabbage, cut into 1 1/2-inch squares
4 scallions, cut into 1-inch pieces
4 slices American cheese
1/2 cup shredded mozzarella
4 hard-boiled large eggs, cut into quarters

Directions

Rinse the rice cakes. Set aside.

Place the bacon in a cold large braiser and cook over medium heat until crispy and the fat is rendered, about 5 minutes. Remove the bacon from the pan with a slotted spoon and set aside.

In the same pan with the bacon fat, cook the garlic over medium heat for just a minute to toast it. Add the rinsed rice cakes, 5 cups water, dashi stock coins, gochugaru, gochujang, sugar, soy sauce, fish sauce and mirin. Bring to a boil, lower the heat to simmer and add the fish cakes, cabbage and scallions. Cook until the rice cakes are tender and the sauce thickens, 3 to 5 minutes. Add the American cheese and mozzarella and stir to melt them into the sauce. Remove from the heat and top with the crispy bacon and the quartered hard-boiled eggs.
