Pani Puri/Gol Gappay
Recipe in English:

Ingredients:
Meethi Chutney:
-Gur (Jaggery) ½ cup
-Khajoor (Soft dates) 4-5 (Deseeded)
-Paani (Water) as required
-Chaat masala ½ tsp
-Sonth (Dry ginger powder) ½ tsp
-Paani (Water) as required
-Namak (Salt) 1 pinch
Green Chutney:
-Hari mirch (Green chilies) 5-6
-Hara dhaniya (Green coriander) ½ bunch
-Podina (Mint leaves) ½ bunch
-Paani (Water) as required
Gol Gappay Water:
-Paani (Water) 5 cups
-Imli (Tamarind) 1 cup (Soak in 1 cup water)
-Ajwain (Carom seeds) ½ tsp
-Chaat masala 1 tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Kala namak (Black salt) 1 tsp
-Sonth (Dry ginger powder) ½ tsp or as required
-Lal mirch powder (Red chili powder) 1 tsp
Gol gappa Dough:
-Sooji (Semolina) 1 cup
-Maida (All-purpose flour) 2 tbs
-Namak (Salt) ½ tsp or to taste
-Paani (Water) as required
-Oil for frying

Directions:
Meethi chutney:
-In frying pan,add jaggery, dates and water, mix until it becomes paste.
-Add chaat masala,dry ginger powder, water and salt,mix well and set aside.
Green chutney:
-In blender,add green chilies,green coriander,mint leaves and water,grind until all combined,set aside.
Gol gappay Water:
-In pot,add water,tamarind pulp,carom seeds,chaat masala,salt,black salt,dry ginger powder and red chili powder,mix it and bring it to boil.
-Strain and set aside to cool down.
Gol gappa Dough:
-In bowl, add semolina,all-purpose flour,salt and water,mix and knead well to form a dough.
-Cover with damp cloth for 30 minutes.
-Knead again until smooth (5-6 mins) and divide the dough into two balls.
-Grease working surface with oil and roll the ball with the help of rolling pin into a flat round circle.
-With the help of cutter,cut into round shapes/small circles and roll again.Poori size shouldn’t more than 2 inches.
-Cover pooris with damp cloth.
-Heat oil in frying pan and fry on low flame. Flip and press slightly.
-Fry until crispy and golden.
Assembling:
-Poke a small hole in the center of the Gol Gappa (or Poori).
-Add some boiled chickpeas and boiled potato.
-Add a little meethi chutney,green chutney,yogurt.
-Sprinkle little onion (fine chopped) and sev nimco, again add little meethi chutney,green chutney,yogurt and sprinkle some chaat masala.
-Pour some spicy water in it or dip it in the spicy water.

Tarkeeb:
Meethi chutney:
-Frying pan mein gur,khajoor aur pani dal ker mix karein yahan tak k paste bun jaye.
-Chaat masala.sonth,paani aur namak dal ker mix ker lein aur side per rakh dein.
Hari Chutney:
-Blender mein hari mirch,hara dhaniya,podina aur pani shamil karein aur achr tarhan grind ker lein,side per rakh dein.
Gol Gappa Pani:
-Pot mein paani,imli pulp,ajwain,chaat masala,namak,kala namak,sonth aur lal mirch powder dal ker mix karein aur ubal anay tak paka lein.
-Strain karein aur thanda kerna kliya side per rakh dein.
Gol gappa Dough:
-Bowl mein sooji,maida,namak aur pani dal ker mix karein,ghond ker dough tayyar ker lein.
-Geelay kapray sa 30 minute kliya dhak dein.
-Dubara dough ko smooth ghond lein (5-6 mins) kliya aur dough ko do balls mein divide ker lein.
-Working surface ko oil sa grease ker lein aur rolling pin ki madad sa falt round circle bana lein.
-Cutter ki madad sa round shapes/small circles mein cut ker lein aur dubara bail lein.Poori ka size 2 inch sa bada nahi huna chahiya.
-Pooris ko geelay kapra sa dhak dein.
-Frying pan mein oil garam karein aur poories ko halki ancch per fry ker lein.Flip aur press ker lein.
-Crispy aur sunhairi hunay tak fry karein.
Assembling:
-Gol gappa (poori) ka center mein small hole ker lein.
-Is mein boiled choley/chanay aur aalo bhar dein.
-Meethi chutney, hari chutney aur dahi dal dein.
-Pyza (fine chopped) aur sev nimco dal dein,dubara sa meethi chutney,green chutney,dahi dalein aur chaat masala chirak dein.
-Upper sa spicy water dal dein ya spicy water mein dip ker lein.

Ingredients

1 tablespoon mirin
6 large eggs
Kosher salt
1 teaspoon sesame oil, plus more for serving
1 teaspoon dashi powder (beef or seafood flavor)
1 teaspoon thinly sliced scallion greens

Directions

Special equipment: a 3-cup (5.5-inch diameter) Korean earthenware pot

Whisk together the mirin, eggs and 1 teaspoon salt in a medium bowl. Set aside.

Brush a 3-cup (5.5-inch diameter) Korean earthenware pot with sesame oil. Combine 1/2 cup water and the dashi powder in the pot and bring to a boil over medium heat. Stir the egg mixture into the pot and cook, stirring gently and constantly with a rubber spatula, keeping an eye on the egg and scraping every bit on the bottom, until the egg is puffed up in the center and almost set but still slightly jiggly, 3 to 4 minutes. There will be a bit of weight and slower movement as the egg sets.

Put a small heatproof bowl on top as a lid and cook over low heat, an additional 2 to 3 minutes. (As it cooks, some liquid will seep through and splatter; that is okay.) Turn off the heat and let rest for 1 minute. Carefully remove the lid and garnish with the scallion greens and sesame oil. Serve with rice and side dishes.

For Americans, a slice of pizza is the perfect quick food. For Koreans, it’s kimbap! Kimbap is so nostalgic for Esther, who grew up eating it on picnics, school trips and car rides.
And though it might look like it, kimbap is NOT sushi ❌ Unlike sushi, the rice is seasoned with sesame oil and salt instead of vinegar and all of the fillings are cooked — usually a mix of protein, vegetables and pickles — but you can fill your kimbap with whatever you have on hand!

It goes perfectly with her Lemon Ramyun, another comfort for Esther that takes something as as simple as a pack of ramyun (Korean ramen) and turns it into something a little more fun and elevated with garlic, lemon, Parmesan and egg yolk.
