Pecan Tassies

Ingredients

Dough:

1/2 cup (1 stick) unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup all-purpose flour, plus more for the tamper

Filling:

1 large egg
3/4 cups light brown sugar
1 tablespoon unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon ground allspice
1/2 teaspoon nutmeg, freshly grated
Pinch kosher salt
3/4 cup chopped pecans
Confectioners’ sugar, for dusting

Directions

Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.

For the dough: Add the butter and cream cheese to the bowl of a stand mixer fitted with the paddle attachment. Cream together until smooth and combined, 3 to 5 minutes. Mix in the flour until just combined. Chill the dough in the refrigerator for 2 hours.

When the dough is cold and firm, portion it into 2 dozen balls. Add each ball to a tassie pan or a mini muffin pan and, using a tamper dipped in flour, press the dough so that it forms a cup. Refrigerate the dough cups for 30 minutes.

To make the filling, cream the egg, brown sugar, butter, vanilla, allspice, nutmeg and salt in a large bowl with an electric mixer until smooth, 2 to 3 minutes. Transfer the filling to a liquid measuring cup for easy pouring.

Sprinkle the pecans amongst the refrigerated dough cups. Pour the filling evenly over the pecans.

Place over indirect heat and bake at 350 degrees F until golden brown and bubbly, 20 to 25 minutes. Cool completely before lightly dusting with confectioners’ sugar. Enjoy!

(Alternatively, you can bake the pecan tassies in a 350 degrees F oven for 20 to 25 minutes.)

How to Make Jet’s House Fried Rice

Yang Chow Fried Rice

Ingredients

2 tablespoons (30 milliliters) neutral oil
1/4 cup (95 grams) finely diced Chinese barbecued pork
1/2 pound (227 grams) medium (51/60) shrimp, peeled and deveined
1/2 cup (70 grams) frozen peas and carrots, thawed
3 large eggs, beaten
4 cups (450 grams) cooked jasmine rice
2 tablespoons (about 16 grams) powdered chicken bouillon
1 tablespoon (15 milliliters) oyster sauce
2 tablespoons (30 milliliters) premium soy sauce
2 to 3 scallions, sliced on the bias (30 to 45 grams)
Pinch ground white pepper

Directions

Heat the oil in a large wok or skillet over high until a wisp of white smoke appears. Add the pork, shrimp and peas and carrots. Stir-fry 30 to 45 seconds, until the shrimp start to turn pink and the vegetables are vivid. Pour in the eggs and add the rice immediately; work the rice into the egg with circular motions and constant folding to avoid smashing the grains. After 30 seconds the egg will have coated the rice.

Sprinkle in the chicken bouillon and add oyster sauce; toss about 30 seconds, until the color is even. Pour the soy sauce around the edges of the wok so it sizzles and perfumes the rice, then add the scallions. Cook for 1 minute, until the rice is steaming, fluffy and the grains are separate but still moist. Finish with a pinch of white pepper and serve immediately.

Beef and Broccoli 2.0

Ingredients

Broccoli:
1 pound (450 grams) broccoli florets

Sauce:
1/3 cup (80 milliliters) beef or chicken stock
3 to 4 tablespoons (45 to 60 milliliters) oyster sauce
1 tablespoon hoisin sauce
2 teaspoons cornstarch
1 teaspoon chicken powder

Beef and Marinade:
2 tablespoons beef stock
1 tablespoon (15 milliliters) oyster sauce
2 teaspoons (4 grams) cornstarch
1 teaspoon baking soda
1/2 teaspoon sesame oil
1 pound (450 grams) New York strip steak or chuck steak
2 to 3 tablespoons (30 to 45 milliliters) vegetable oil
2 cloves garlic, minced
2 teaspoons (10 milliliters) rice wine
1 teaspoon crushed red chile flakes, optional

Directions

For the broccoli: Place the florets in a microwave-safe bowl and add 2 tablespoons of water. Cover the bowl tightly with plastic wrap. Microwave on high for 2 to 3 minutes, until the broccoli is bright green but still crisp. Carefully remove the cover to avoid steam burns and reserve.

For the sauce: In a small bowl, whisk together the stock, oyster sauce, hoisin sauce, cornstarch and chicken powder until the cornstarch is fully dissolved. Reserve.

For the beef and marinade: Add the stock, oyster sauce, cornstarch, baking soda and sesame oil to a medium bowl. Slice the beef against the grain into thin strips and add it to the bowl. Massage the marinade into the beef for about 30 seconds and reserve.

Heat a wok or a large skillet on high heat and add the vegetable oil. When a wisp of white smoke appears, add the garlic and marinated beef. Cook for about 1 minute, continually moving the beef so it browns on all sides but is still rare. Add the broccoli and cook for an additional minute. Stir in the sauce and keep it all moving, making sure to scrape any bits off the sides and bottom before they start to burn. Deglaze with the rice wine and add the chile flakes if using. Cook until the sauce has reduced to a nice thick glaze, about 1 minute. Serve immediately.
