Crab Gravy
RECIPE COURTESY OF STOGIE JOE’S TAVERN
Level: Easy
Total: 3 hr 5 min
Active: 55 min
Yield: 8 to 10 portions

Ingredients

1/4 cup (4 tablespoons) butter
1/4 cup extra-virgin olive oil
1 1/2 cups diced celery
1 1/2 cups chopped leek whites
1 1/2 cups diced onions
1 tablespoon chopped garlic
1 teaspoon crushed red pepper
Pinch dried oregano
2 bay leaves
1 small bunch fresh parsley
1 small bunch fresh thyme
12 blue crabs, backs off and cleaned
1 cup white wine
1 gallon canned crushed plum tomatoes
Salt and pepper
2 tablespoons seafood seasoning, such as Old Bay
2 pounds linguine

Directions

Combine butter and oil in an 8- to 10-ounce stockpot over medium heat. Add celery, leeks and onions and cook, making sure they do not brown, 5 to 7 minutes. Add garlic, red pepper, oregano, bay leaves, parsley and thyme. Cook just to bring everything together, about 3 minutes.

Add crabs and cook over medium to low heat, covered, stirring often, 8 to 10 minutes. Add white wine and cook until wine is cooked out, about 5 minutes. Add tomatoes and 3 to 4 cups water and simmer for 1 1/2 to 2 hours. Add salt, pepper and seafood seasoning to taste.

Boil linguine and pour sauce over top.

    Crab gravy (crabs and macaroni) is a South Philly/South Jersey tradition. But it's meant to be served with the backs and claws on top. You eat the macaroni and then eat the crabs with your hands. It's a messy, regional meal meant to be enjoyed with family in the summertime. We'd hang traps off the railings at my parent's shore house, my dad would kill our catch, my mom would clean them and make the gravy almost immediately. The tradition lives on with my own family today. I feel blessed to have such amazing childhood memories! 🦀 🥫🍝🥖

Panko-Crusted Salmon
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 35 min
Prep: 15 min
Inactive: 10 min
Cook: 10 min
Yield: 4 servings

Ingredients

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Directions

Preheat the oven to 425 degrees.

In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.

Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.

Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.

Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.
