Sheet-Pan Bacon Egg Sandwiches for a Crowd
RECIPE COURTESY OF FOOD NETWORK KITCHEN
Level: Easy
Total: 55 min
Active: 15 min
Yield: 16 sandwiches

Ingredients

8 slices bacon (about 8 ounces), cut into 1/2 inch pieces
1 tablespoon vegetable oil
18 large eggs
1/2 cup half-and-half
3 scallions, thinly sliced
Kosher salt and freshly ground black pepper
2 plum tomatoes, seeded and diced
2 cups shredded sharp Cheddar
16 potato sandwich rolls, split
Hot sauce, for serving

Directions

Special equipment: an 18-by-13-inch sheet pan

Preheat the oven to 350 degrees F. Spread the bacon pieces in a single layer on an 18-by-13-inch sheet pan and drizzle with vegetable oil. Bake until crisp and lightly browned, about 15 minutes, stirring halfway through. Remove the pan from the oven but do not drain the fat or remove the bacon. Reduce the oven temperature to 300 degrees.

Meanwhile, whisk the eggs, half-and-half, scallions, 2 teaspoons salt and 1/4 teaspoon pepper together in a large bowl. Redistribute the bacon evenly on the sheet pan, then pour the egg mixture over and top with tomatoes and cheese. Return the pan to the oven, being careful not to spill, and bake until the eggs are just set, about 25 minutes.

Let the eggs cool 5 minutes before cutting. Meanwhile, warm the buns in the oven on a separate baking sheet. Use a knife or pizza cutter to cut the eggs into 16 even portions and place them between the bun halves. Serve the sandwiches with hot sauce on the side.

Why would you use a bun for a breakfast sandwich? A biscuit or toast would be a lot better.

It's an egg brownie. Id rather sit there and make multiple scrambled eggs. Scrambled eggs literally take 10 seconds on high heat. It's also way more engaging. So you could finish up over a dozen eggs in a few minutes. Also, if you keep the bacon separate, it stays crunchy and doesn't get soggy by sitting in eggs for 20 mins.

“The Lord is not slow in keeping his promise, as some understand slowness. Instead he is patient with you, not wanting anyone to perish, but everyone to come to repentance.”
    ‭‭2 Peter‬ ‭3:9‬ ‭NIV‬

ROMANS 10:9-11 “If you declare with your mouth, “Jesus is Lord,” and believe in your heart that God raised him from the dead, you will be saved. For it is with your heart that you believe and are justified, and it is with your mouth that you profess your faith and are saved. As Scripture says, “Anyone who believes in him will never be put to shame”

Matthew 11:28-30 “Come to me, all you who are weary and burdened, and I will give you rest. Take my yoke upon you and learn from me, for I am gentle and humble in heart, and you will find rest for your souls. For my yoke is easy and my burden is light.”

“For the Son of Man came to seek and to save the lost.””
    ‭‭Luke‬ ‭19:10‬ ‭

God wants us to believe in His One and Only Son, Jesus Christ our Lord and Savior, who died for our sins 😀 When we truly believe in our hearts that Jesus is the Son of God, who died for our sins so we could have eternal life with God, we are saved from the eternal fire and have eternal life in Christ Jesus!! 💖 May God bless you all! ❤️🕊

Scalloped Potatoes
RECIPE COURTESY OF MOLLY YEH
Level: Easy
Total: 2 hr (includes cooling time)
Active: 35 min
Yield: 4 to 6 servings

Ingredients

2 tablespoons unsalted butter, plus more for greasing
3 tablespoons all-purpose flour
1 1/2 cups whole milk
1/4 teaspoon ground nutmeg
1 teaspoon kosher salt
Freshly ground black pepper
4 ounces Gruyere, shredded
Nonstick cooking spray, for the baking dish, optional
2 pounds Yukon gold potatoes, peeled and sliced 1/8-inch thick
6 ounces thick-cut ham, diced
1/2 cup chopped fresh chives

Directions

Preheat the oven to 350 degrees F.

In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Whisk in about 1/2 cup milk and cook, whisking, until thickened. Add another 1/2 cup milk and cook, whisking, until thickened, about 3 minutes. Add the remaining 1/2 cup milk and cook, whisking, until thickened, another 3 to 4 minutes. Add the nutmeg, 1/2 teaspoon salt, a few turns of black pepper, and half the cheese. Cook gently for a few minutes, making sure all the cheese is melted.

Grease or butter an 8-inch square baking dish. Arrange half of the potatoes all over the bottom. Sprinkle with 1/4 teaspoon salt. Layer in half of the cream mixture, then sprinkle on the ham and half of the chives. Arrange the other half of the potatoes on top, then sprinkle with the remaining 1/4 teaspoon salt, remaining cream, remaining shredded cheese and remaining chives. Cover and bake for 45 minutes, then uncover and bake until browned on top, an additional 20 minutes. Let cool slightly, then serve.
